  • 2 cups cold water
  • 1 1/4 cups apple cider vinegar
  • 1 cup concentrated palm sugar
  • 2 tablespoons Worcestershire sauce (English soy sauce)
  • 1/4 cup molasses
  • 1 cup tomato paste

Step 1. Mix the ingredients

Melt the butter in a large saucepan over low heat. Once melted, slowly add the chopped onion and garlic and cook until soft. Sprinkle paprika, ground red chili, chili powder and pepper. Cook for one minute until fragrant.

  • Add the remaining ingredients – water, palm sugar, vinegar, molasses, tomato paste and English soy sauce.

Step 2. Let it boil

Once all the ingredients are in, let it simmer over low heat, uncovered, for about 10 to 15 minutes. Stir occasionally. After the sauce thickens a bit, try the taste, adding more seasoning if needed.

Set aside 1 1/2 cups of sauce to use in preparing the chicken. Let the remaining sauce cool and refrigerate until the chicken is ready to serve.
