Chickpeas, also known as garbanzo beans, are used in hummus, lettuce and stews. Although ready-to-eat canned chickpeas are widely available, you can make more nutritious dried chickpeas from your stock. The process of soaking, boiling and seasoning chickpeas takes 12 hours.

Part 1 of 3: Buying Dried Chickpeas
Step 1. Look for dried chickpeas in the bulk foods section of your supermarket
But not all supermarkets sell dried chickpeas.
Step 2. Look for bulk chickpeas at an organic or plant-based food store
Chickpeas are usually sold in shops that sell a wide selection of bulk foods.
Step 3. Make sure the bulk chickpea store has a high turnover rate
Although a dry food, chickpeas can go stale within a few months of being in a bulk container.
Step 4. Buy 454 grams of bulk chickpeas
Part 2 of 3: Soaking Dried Chickpeas
Step 1. Pour chickpeas into a large bowl
Select and get rid of the bad chickpeas. Any dark or undersized nuts should be discarded.
Step 2. Cover the beans with at least 10 cm of cold water
The beans should absorb the extra water overnight.
Step 3. Discard any nuts that float to the top of the bowl
Step 4. Add 1/2 tsp. salt. Mix in the water with a wooden spoon.
Step 5. Let the chickpeas sit for 12 hours
Soak the beans at night so they can be prepared the next day.
Part 3 of 3: Cooking Soaked Chickpeas
Step 1. Drain the chickpeas by pouring them into a colander
Make sure the sieve or sieve holes are smooth enough so that the chickpeas don't fall out.
Step 2. Place the dried chickpeas in a large pot or pan
Step 3. Cover the chickpeas with 7.6 cm of fresh cold water
Step 4. Bring the water and chickpeas to a boil on high
Then, reduce the temperature to a slow boil.
Step 5. Set the kitchen timer for 1.5 hours
Cover the pan when it boils.
Step 6. Open the lid and add spices, such as bouquet garni or garlic, for the last few minutes
Step 7. Test the beans
The beans should be firm and not mushy. If the beans are too hard, simmer for another half hour and covered
Step 8. Drain and cool the beans
Serve immediately, use in recipes or freeze for later use.
