Part 1 of 2: Seasoning Basics
Step 1. Add salt after it becomes burger meat
Depending on the flavor you want and the type of burger you want to make, the variety of seasonings and combinations for seasoning is endless. You can add different seasonings at different stages of making a burger but one thing is always needed: salt. Before you place the burgers on the grill or stove, season both sides of the burger with sufficient salt.
Salt dissolves muscle protein, removing water from meat. Adding salt to raw meat before forming into a burger patty will result in a dry, tough burger, and a loss of flavor and texture to the delicious meat. So in cooking a burger patty, don't salt it directly, and put salt on the outside of the patty
Step 2. Always use dry spices on the outside instead of the inside
If you're looking for a condiment option because your burger tends to be dry and bland, it's probably because of the way you handle the meat. It is important not to put spices in the meat. Adding seasoning on the outside of the burger patty will make for a delicious burger.
- The meat should be shaped quickly, into about 113g portions with a small groove in the middle, then seasoned before cooking.
- Don't squeeze. If you want it to be as dry as the ribs, go for it, but don't knead the meat. Handle burger meat as rarely as possible.
Step 3. Use lots of spices
Sprinkle as much dry seasoning as you want on the patty from a few inches on top, evenly and generously. The big difference between a delicious burger at a restaurant that you make at home is the amount of seasoning used on the meat. Use more than you normally use.
Ground beef is not rich in flavor. Even the best quality ground beef has a tendency to taste bland when not seasoned properly. Give a lot of seasoning or don't just eat burgers. Sprinkle a generous amount of salt and freshly ground black pepper until you can feel the spices in every bite
Step 4. Even though it takes a lot of spice, sometimes the best thing is simplicity
Burgers seasoned only with salt and pepper and topped with cheese make for a delicious and often the most ideal burger, apart from adding all the toppings and other additions after cooking. So, why change the perfect thing?
To make a great burger, add it all up after the burger meat is done cooking. Do you like raw onions and ranch sauce? Just use it. Don't let someone else manage your burger
Step 5. Experiment
There's no better way to season a burger if it tastes good to you. Mix the seasonings and have and do a taste test, try a few combinations on a few raw burgers, to see which you and your family like best. Don't forget to handle raw burgers as rarely as possible, sprinkle with seasonings before placing on the stove or grill, your meal will be successful.
Part 2 of 2: Try Some Combinations
Step 1. Make your own salt seasoning
If you like McCormick's or Lawry's spice mixes, why not try making your own? Especially if you have everything you need ready in the cabinet in your kitchen. To make a simple salt dip for burgers or other meats, start by mincing a clove of garlic. For faster preparation, place the peeled onions in a food processor. Press the processor on and off button until fully chopped, and add to the garlic:
- 1 cup salt
- 1 tablespoon sweet paprika
- 1 tablespoon chili powder
- 1 tablespoon dried basil
- 1 tablespoon pepper
- 1 tablespoon celery seeds
- 1 teaspoon ginger powder
- 1 teaspoon dry mustard
- 1 teaspoon dill
- Mix all ingredients evenly, store in an airtight container in the refrigerator. It can be used to season burgers and other meats. This is a fresh base mix.
Step 2. Try the curry spice mix
If you want to try a burger with Indian spices, it can be a pleasant surprise as an alternative to the usual salt and pepper. To make the perfect curry condiment for burgers, vegetables or chicken, cook these seasonings in a skillet over medium heat for a few minutes and continue to stir until fragrant and lightly browned:
- 1 tablespoon cumin
- 1 tablespoon coriander
- 1 teaspoon mustard
- 1/2 teaspoon fenugreek
- 1/2 teaspoon fennel
- Remove the spices from the skillet and puree and mix well. This condiment is great for burgers with fresh coriander and spicy chutney.
Step 3. Try mixing the fresh ingredients into the ground beef
Do it gently, adding sliced onions, basil and other green spices to the meat, this is a good way to add an interesting taste and aroma as it cooks. Some burger lovers like raw garlic in the meat, others like the addition of oregano. Use the seasoning you like. Depending on the type of topping and the flavor you use on the burger after cooking it, add some fresh ingredients in the meat for an added touch.
Step 4. Brush the marinade or wet seasoning on the outside of the burger patty before cooking
A mixture of Worcestershire (English soy sauce), brown sugar, horseradish, soy sauce and hoisin is delicious when added to ground beef. if you want to mix wet spices and sauces, brush on the burgers before cooking, this will result in caramelization and a delicious crust.
Wet spice mixes are less recommended but possible. This method can overhandle the meat and break down the protein, but gently kneading the soy sauce shouldn't be a problem
Tips
- You can add extra seasoning on top of the burger patty when you're done cooking one side.
- Use kosher or coarse sea salt to season the meat. This salt has a unique shape and a larger surface of salt crystals which increases the impact of flavor on the meat.
- Use freshly ground black or white pepper to season the burgers.
