Marinade is a mixture of wet spices, oils, and acids used to season meat. The mixture of the ingredients will tenderize the meat and make it more flavorful. There are many marinade recipes, but the sweet and spicy seasoning is perfect for the ribs. First, thaw the frozen ribs, remove the coating, and wash them thoroughly. Next, soak the ribs in a steak, Asian, or molasses marinade before you cook them. For best results, always prepare beforehand as you will have to marinate the ribs for one night
Ingredients
Barbecue Marinade
- 1 bottle of barbecue sauce
- 1 bottle of beer (optional)
- Honey to taste (optional)
- Hot sauce to taste (optional)
- Lime juice to taste (optional)
- Garlic to taste (optional)
Steakhouse-style marinade
- 1 cup (200 ml) vegetable oil
- cup (120 ml) apple cider vinegar
- 3 tbsp. (35 grams) brown sugar
- 1 tsp. (15 ml) soy sauce
- 1 tsp. (15 ml) Worcestershire sauce
- 1 tsp. (10 grams) garlic powder
- tsp. (1 gram) onion powder
- tsp. (5 grams) kosher salt
Asian-style marinade
- 1 cup (200 ml) honey
- cup (80 ml) soy sauce
- 3 tbsp. (45 ml) sherry (a type of wine)
- 2 tsp. (6 grams) garlic powder
- tsp. (1 gram) crushed red chili
Molasses Coffee Marinade
- 1 cup (200 ml) strong coffee
- 1 piece of onion
- cup (120 ml) molasses
- cup (120 ml) red wine vinegar
- cup (60 ml) Dijon mustard
- 1 tsp. (15 ml) Worcestershire sauce
- cup (60 ml) soy sauce
- 1 tsp. (15 ml) hot sauce
- 2 tbsp. (30 grams) red onion
Marinade Kola
- 2 liters of cola
- 2 tbsp. (30 grams) chili powder
- 1 cup (200 ml) water
- 1 piece of onion
- 2 cloves of garlic
- cup (100 ml) tomato sauce
- 2 tbsp. (30 grams) brown sugar
- 2 tbsp. (30 grams) Worcester sauce
- 2 tbsp. (30 grams) apple cider vinegar
Step
Method 1 of 2: Soaking Ribs in Marinade
Step 1. Defrost the ribs completely by transferring them from the freezer to the refrigerator for 2 to 4 days
Before marinating or cooking ribs, make sure the ribs are completely thawed. The easiest and safest way to defrost ribs is to place them in the refrigerator for 2-4 days before you cook them.
If you use this method, the ribs will melt in time 24 hours for every 2 kg of meat.
Step 2. Defrost the ribs in just a few hours by soaking them in cold water
Put cold water in a bowl or sink. Place the ribs until they are fully submerged in the water with the wrapper or an airtight plastic bag. Add cold water if necessary to keep the water temperature at 4 °C.
If you use this method, the ribs will fully defrost within 30 minutes for every 0.5 kg of meat
Step 3. Wash the thawed ribs with cold water
Remove the ribs from the wrapping bag and place under a stream of cold water. This is to remove bone debris and debris left during cutting.
Step 4. Remove the membrane that is on the underside of the ribs
The membrane is a paper-thin layer on the underside of the ribs. The lining on the ribs is often removed when you buy them. If not, slide a small knife between the bones and membranes to tear the membranes apart. This should be easy to do. If this is difficult, use a sharp knife. After that, use your hands to pull the membrane attached to the bone.
If the membrane is not removed, the ribs will have a chewy, tough texture
Step 5. Rub the marinade on the ribs
Rub the marinade into the meat using a brush, spatula, or hands. Coat all the meat on both sides with a thick layer.
Step 6. Place the ribs in a covered container and refrigerate for 2 to 24 hours
Leave the ribs in the refrigerator for at least 2 hours for the marinade to soak into the meat, or 24 hours for the strongest flavors. Keep the ribs moist by adding marinade every 3 hours.
Always marinate meat in the refrigerator, and don't reuse marinade that has been used
Step 7. Grill the ribs for a smoky aroma, or bake the ribs in the oven for a softer texture
Bake the ribs using indirect heat for about 1 hour, then reheat over direct heat for another 20 minutes until cooked through. You can also bake it in the oven for 2 to 2 hours at 135 °C.
When the meat starts to lift off the end of the bone, you can taste it to check if the ribs are done
Method 2 of 2: Making Various Marinades
Step 1. Purchase barbecue sauce at the store for an easy and flavorful marinade
For an easy marinade, spread your favorite barbecue sauce over the ribs and marinate for at least 1 hour. To add flavor to your homemade barbecue sauce, add honey, hot sauce, lime juice, or garlic to taste. You can also add a bottle of beer to the barbecue sauce to give the drink some flavor.
To make it easier for you, cook the ribs in a slow cooker
Step 2. Make a steakhouse marinade for a classic taste
Mix and shake 1 cup (200 ml) vegetable oil, cup (100 ml) apple cider vinegar, 3 tbsp. (35 grams) brown sugar, 1 tbsp. (15 ml) soy sauce, 1 tbsp. (15 ml) Worcestershire sauce, 1 tbsp. (10 grams) garlic powder, tsp. (1 gram) shallot powder, and salt to taste in a large bowl. Marinade the ribs for a minimum of 2 hours, or one night (ideally). If the container doesn't fit on the refrigerator shelf, place the ribs in a large plastic bag, or separate the ribs into two halves and place them in two containers.
Save some of the marinade for additional sauce that you can rub on the cooked ribs later
Step 3. Make an Asian-style marinade for a spicy and sweet taste
Mix 1 cup (200 ml) honey, cup (80 ml) soy sauce, 3 tbsp. (45 ml) sherry, 2 tsp. (5 grams) garlic powder, and tsp. (1 gram) mashed red chili. Heat this mixture on the stove over medium heat, and stir all ingredients until well combined. Let the mixture cool before you pour it over the ribs. Marinate the ribs for 12 hours for the best flavor.
If you want a spicier marinade, use more ground red chili
Step 4. Marinade the molasses coffee for a unique taste
Mix 1 chopped onion, 2 tbsp. (30 grams) chopped onion, 1 cup (200 ml) strong coffee, cup (100 ml) molasses, cup (100 ml) red wine vinegar, cup (60 ml)) Dijon mustard, 1 tbsp. (15 ml) Worcestershire sauce, cup (60 ml) soy sauce, and 1 tbsp. (15 ml) hot sauce, then cook over medium heat. When all the ingredients are well combined, turn off the heat and set aside about 1 cup (200 ml) of the mixture to use as a dipping sauce. Once the mixture has cooled, marinate the ribs in it for at least 2 hours.
You can also apply additional marinade to the ribs as you cook them
Step 5. Make a cola marinade for a classic American flavor
Mix 2 liters of your preferred cola with 2 tbsp. (30 grams) chili powder, 1 cup (200 ml) water, 1 onion, 2 cloves of garlic, 100 ml tomato sauce, 2 tbsp. (30 grams) brown sugar, 2 tbsp. Worcester sauce, and 2 tbsp. apple cider vinegar. Add salt and chili according to taste. Heat the mixture over medium heat until thickened. Cool this thick sauce and puree in a blender for 1 minute or until the mixture is smooth.
