If you are storing whole cakes, pack them well and store them at room temperature. Place in the refrigerator or freeze for longer shelf life. If you are saving a piece of cake or the top of a wedding cake, make sure all sides are covered before storing it.

Method 1 of 2: Storing Whole Fondant Cakes
Step 1. Cover and store the cake at room temperature for up to three days
For shorter storage, cover the cake with plastic wrap. Transfer the cakes to a container and store the cakes at room temperature until you need them. Cake should be used within 2-3 days.
- If you grease the cake with a light layer of buttercream or other coating under the fondant, you can still store it at room temperature.
- If you don't have a special container for storing your cakes, cover the cakes with a large, inverted bowl.
Step 2. Place the cakes in the refrigerator, if necessary
If your kitchen is hot or humid, or your cake has a certain filling that needs to be refrigerated, store the cake in the refrigerator for 2-3 days. Wrap the cake in plastic wrap and place it in a cardboard box. Cover the cardboard with tape to keep the cake out of moisture.
- While you can store your cakes in a cake tin instead of cardboard, they can still get soggy. Moisture will damage the color of the fondant due to the formation of dew.
- If the cake is filled with pastry cream, whipped cream, pudding, mousse, or fresh fruit, you should store the cake in the refrigerator.
Step 3. Protect the cake from light
If you store your cake in a special cake container, store it and keep it away from sunlight and fluorescent lights. Light can change or fade the color of the fondant.
Consider using cardboard instead of cake containers, as cardboard blocks out light more effectively
Step 4. Freeze the cakes for long term storage
If you want to keep the cake for more than a few days, freeze it. The cake will last up to a year. Place the whole cake in the refrigerator for 30 minutes until the fondant hardens. Remove from the refrigerator shelf, and wrap tightly in plastic. Then, cover the plastic wrap with aluminum foil. Transfer the cake that has been packed neatly into a large plastic bag or airtight container according to the size of the cake. Put it in the freezer.
Transfer the cake and its container to the refrigerator a few days before you are going to eat it. When it's melted, keep the cakes at room temperature before unwrapping and serving
Step 5. Check for signs of mold
If you are defrosting or storing the cake for some time, check the cake for signs of damage before eating or serving it. Signs of mold or stale cake include:
- Hard or dry cake texture
- Wet or runny fondant
- Moldy or slimy filling
- Mushrooms on fondant
Method 2 of 2: Saving Fondan Cake Pieces
Step 1. Place the cake slices on a plate and cover the exposed parts with a layer of frosting before storing them for two days
Pieces of cake are more likely to dry out due to exposure to air. To protect and store the cake for 1-2 days, place the cake slices on a plate. Apply a layer of frosting on the side facing up. The frosting will protect the air from drying the cake. Put the cake in a cake container and store it at room temperature.
You don't need to add fondant to this piece of cake
Step 2. Wrap the cake pieces with plastic wrap and store for 1-2 days
If you don't want to put extra frosting on the cake slices, place the cake on a plate. Then, tear the plastic wrap and cover the plastic on all sides of the cake. This way, no air should get into the cake. Store the cake slices at room temperature for 1-2 days.
Don't worry the plastic will stick to the fondant. This kind of plastic wrap can be easily peeled off without damaging the fondant
Step 3. Freeze the cake slices or the top of the wedding cake for up to one year
If you want to freeze the cake slices or the top of the birthday cake to eat later, tear a large piece of plastic wrap. Place the cake slices or the top of the cake on the plastic wrap and wrap tightly. Place these slices of cake in the freezer and consume within a year.
