Step 1. Select the desired type of ribs

There are 2 types of ribs for barbecue, namely spare ribs and baby back ribs. The spare ribs are fatter and take longer to cook, while the baby back ribs have less fat with a faster cooking time.

Step 2. Make the dry spices

Dry seasoning consists of various spices that will be applied to the surface of the ribs to add flavor. Dry seasoning for 1 kilogram of ribs consists of:

  • 1 tablespoon (5 ml) cumin
  • 1 tablespoon (15 ml) paprika powder
  • 1 tablespoon (15 ml) garlic powder
  • 1 tablespoon (15 ml) onion powder
  • 1 tablespoon (15 ml) chili powder
  • 1 tablespoon (15 ml) palm sugar
  • 2 tablespoons (30 ml) kosher salt
  • 1 teaspoon (5 ml) cayenne pepper powder
  • 1 teaspoon (5 ml) black pepper
  • 1 teaspoon (5 ml) white pepper

Step 3. Make the seasoning wet (optional)

Wet seasoning consists of a mixture of sauces that will be applied to the surface of the ribs to make them more delicious and seasoned as they cook. However, some people prefer ribs only seasoned with dry herbs.

Step 4. Cut the ribs and apply the dry spices

On the back of the ribs (not the meat) there is usually a large membrane attached. Many people cut and throw it because it is difficult to chew. If the membrane is left, the dry seasoning will be difficult to stick to the entire surface of the ribs. After that, coat the ribs with olive oil or vegetable oil until smooth (optional) then season the entire surface of the ribs with a generous amount of dry spices.

Step 5. For spare ribs, place the ribs on a covered barbecue grill and cook at 107°C for 5-6 hours

For baby back ribs, cook at the same temperature for 3-4 hours. Place the ribs on a grill rack to avoid direct heat.

Step 7. If the meat in the middle of the ribs is white and the liquid is clear (not pink), it means the ribs are cooked

Tips

  • Barbecue ribs can also be cooked in a smoker. Cook spare ribs with hickory and/or apple tree wood in a smoker. The temperature and smoking time used are the same as for cooking ribs with a barbecue grill.
  • Before serving, turn off the grill and place the ribs directly on the heat for a few minutes. This will give the ribs a darker color and a clearer grill mark.
