Green or brown lentils, also known as continental lentils, are a type of lentil that is rich in protein, iron, and fiber. Therefore, green or brown lentils are perfect for consumption as a vegetarian dish. Unlike red or yellow lentils, green or brown lentils do not crack when cooked. This article will discuss 3 ways to make lentil dishes, namely vegetable lentil soup, fresh lentil lettuce, and Megadarra (a famous Egyptian dish).
Ingredients
Basic Lentils
- 1 cup dry green or brown lentils, choose good ones and wash
- 1 1/2 cups water
- Salt and pepper
Vegetable Lentil Soup
- 2 tablespoons olive oil
- 1 cup chopped onion
- 1 carrot, peeled and chopped
- 1 teaspoon salt
- 450 grams of dry green or brown lentils, choose a good one and wash it
- 1 cup chopped boiled tomatoes
- 1.5 liters of vegetable stock
- 1/2 teaspoon coriander
- 1/2 teaspoon cumin
Fresh Lentil Lettuce
- 1 cup chopped red onion
- 1 cup chopped tomatoes
- 1/2 cup chopped parsley
- 2 cloves garlic, chopped
- 2 cups dry green or brown lentils, choose good and wash
- 1/3 cup olive oil
- 1/4 cup balsamic vinegar
- 3 teaspoons Dijon mustard
Megadarra
- 1/2 cup olive oil
- 2 onions, thinly sliced
- 1 1/2 cups dry green or brown lentils, choose good ones and wash
- 5 cups of water
- 1 1/2 cups long grain rice
- 1 1/4 cups plain yogurt
- 2 cloves garlic, chopped
- 1 teaspoon lemon juice
- 1/4 teaspoon cumin
- Salt and pepper
Step
Method 1 of 4: Basic Lentils
Step 1. Choose good lentils and wash them thoroughly
Dried lentils, especially when bought in bulk bags, are usually mixed with small rocks. Sift the lentils and discard any mixed items. Wash the lentils in a small slotted colander.
Step 2. Pour the washed lentils into the pan
Step 3. Pour the water into the lentils
Then, boil the lentils.
Step 4. Reduce the heat when the water starts to boil
Boil for 40-45 minutes. Stir in the lentils occasionally. The lentils will be cooked when the water has been absorbed and the lentils are tender.
Step 5. Remove the lentils and strain
Lentils can be seasoned directly with salt and pepper or cooked according to the recipe required.
- Add to the warm lettuce, casserole, and stuffing (stuffing).
- Add the lentil puree to the soup.
- Pair with white rice or bulgur as a side dish.
- Mash the lentils to make a vegetarian pâté.
Method 2 of 4: Vegetable Lentil Soup
Step 1. Choose good lentils and wash them thoroughly
Step 2. Heat the olive oil in a large skillet over high heat
Step 3. Saute onions and carrots
Stir in the vegetables occasionally and sauté until the onions change color and are tender.
Step 4. Add salt, lentils, vegetable stock, tomatoes and spices
Bring the soup to a boil then cover the pot and reduce the heat.
Step 5. Cook the soup for 40 minutes
Taste the soup and add salt or other seasonings if necessary. Serve the soup with bread or crackers.
Method 3 of 4: Fresh Lentil Lettuce
Step 1. Choose good lentils and wash them thoroughly
Step 2. Boil water over medium heat
Add lentils. Then, cover the pot and reduce the heat. Cook lentils until tender for 20 minutes. Strain the lentils when they are done cooking.
Step 3. Make the sauce
Place the oil, vinegar, mustard, and garlic in a small bowl.
Step 4. Make the lettuce
Combine lentils, tomatoes and onions in a bowl. Add the sauce to the lettuce mixture and stir until smooth. Serve lettuce as a side dish or main course for lunch.
Method 4 of 4: Megadarra
Step 1. Choose good lentils and wash them thoroughly
Step 2. Heat half the olive oil in a frying pan
Add the onions and sauté while stirring until browned and caramelized. Remove from fire.
Step 3. Put the lentils in the water in the pan
Boil the lentils then cover the pan and reduce the heat. Cook for 15 minutes.
Step 4. Add onion, rice, 1 tablespoon olive oil, salt and pepper
Cover the pan and cook for another 20 minutes.

Make sure the lentils and rice are cooked through before removing from the heat.

If necessary, add water to prevent the lentils and rice from sticking to the pan.
Step 5. Make the sauce
Combine the remaining olive oil, yogurt, garlic, lemon juice, and spices in a bowl.
Step 6. Serve the lentils in a serving bowl
Add caramelized onions on top. Serve Megadarra with yogurt sauce.
