- 1 bag (5.5 ounces) Tortilla chips
- 1 cup refried peanuts
- 1/2 cup Pico de Gallo or salsa
- 4 tablespoons diced green chilies (optional)
- 2 cups grated mixed Mexican cheese or grated fresh cheese
- 1/2 cup Guacamole
- 1/2 cup sour cream

Method 1 of 3: Making Nachos in the Microwave
Step 1. Spread the potato chips in a microwave-safe plate or large plate
If you want to make nachos for a group, use a bag of potato chips. If you want a smaller portion, pour in the potato chips as needed (you can try a half or quarter bag).
If you are making more than one plate of nachos, you can use two plates and heat them in the microwave separately
Step 2. Place one cup of refried nuts in a microwave-safe bowl
Add cup of Pico de Gallo and heat for 30 seconds. Mix.
If your nuts are still too firm to mix easily after 30 seconds, reheat for another 15 seconds until smooth. Heat your beans just until they are warm, you don't need to make them hot
Step 3. Make your nachos
This is the fun part. Pour the peanut and Pico de Gallo mixture all over the surface of your potato chip stack. Since the refried beans may be a little sticky, it will be easier for you to pour the lumps all over the chips than trying to spread them all over the chips.
Step 4. Sprinkle cheese on top
Take your grated cheese and distribute evenly until you have used 2 cups of grated cheese. If you want, you can use less cheese. Sprinkle 4 tablespoons of diced green chilies over your nachos if you want the nachos spicy.
- You can use prepackaged Mexican mixed cheeses or you can grate your own cheese.
- Sprinkle cheese evenly over the tortilla potato chips. You don't want to eat potato chips that aren't topped with cheese.
Step 5. Heat your nachos
Place the plate in the microwave and heat for 1-2 minutes. If the beans are still cold after 2 minutes, reheat them for another 30 seconds until they are hot.
- Don't let your beans get too hot to the point of boiling, as this will make them dry and tough. Refried beans if they boil can make your microwave dirty.
- Be careful when you remove the dishes from the microwave, they may be hot enough to burn marks on your hands.
Step 6. Perfect your nachos
Remove the plate from the microwave when your beans are hot enough and pour cup sour cream and cup guacamole right over the top and center of the plate or all over the plate.
- If you wish, you can use less guacamole and sour cream.
- If you want, pour a spoonful of salsa or Pico de Gallo over your nachos.
Step 7. Enjoy
Depending on how hot your nachos are, you may need to let them sit on the table for a while before you enjoy them. Serve while still warm and provide extra plates and napkins to share. Enjoy it as a main course with tacos, burritos, chicken wings, or whatever you like!
Method 2 of 3: Making Nachos in the Oven
Step 1. Preheat your oven
Place a rack in the center of the oven and preheat your oven to 176 degrees Celsius.
Step 2. Line the pan
Use foil to line the baking sheet and pour all of your potato chips onto the foil, pouring out evenly. Aluminum foil is used to make it easier for you to clean your pan later. The foil also makes it easy for you to transfer your cooked nachos to a separate plate.
Step 3. Warm your beans
In a small saucepan over low heat, cook the refried beans until soft enough to pour over the nachos. Sometimes you need to stir until your beans are warm.
Do not overcook your beans to boiling, this will make them dry and tough
Step 4. Pour the warm peanuts over your potato chips
Pour 2 cups of peanuts over the surface of the potato chips. Pour as evenly as possible. Sprinkle 4 tablespoons of diced green chilies over your potato chips if you want the nachos spicy.
Step 5. Sprinkle cheese on top
Use pre-wrapped grated cheese or cheese that you grate yourself and sprinkle evenly over your nachos. Use about 2 cups of cheese. The point of this step is to cover all of your potato chips with a thin layer of cheese. You can use more or less cheese, according to your taste.
Step 6. Add the final touches
Remove the pan from the oven when your nuts are hot and your cheese has melted. Make sure you wear oven mitts when removing the pan. Pour cup of the sour cream and cup of guacamole over the nachos.
Pour back a spoonful of salsa or Pico de Gallo on top if you wish
Step 7. Enjoy
The beans and cheese may still be very hot, so you'll need to let your nachos sit for a few minutes before you eat them. Serve while still warm with your drink of choice.
Method 3 of 3: Adding Extra Sprinkles and Variations
Step 1. Make your nachos meaty
The nachos themselves taste pretty good, but you can make them even better by adding meat to them. You can use fresh meat, but this is also a good opportunity to use leftover meat. Add kg of cooked ground beef, ground pork, or small pieces of chicken over the nachos or mix with nuts.
Step 2. Add cold sprinkles
Slice cold lettuce, add sliced fresh avocado, sliced black olives, jalapeo rings, diced fresh tomatoes, sliced scallions, or cilantro. Try to be creative and add as much or as little ingredients as possible. You can also add or reduce guacamole or sour cream, according to your taste.
Step 3. Get creative with cheese
You can add a variety of different cheeses to make the perfect nachos. Try pepper jack cheese, Colby jack, Monterey jack, or any of your favorite or different cheeses.
Pepper jack is a spicier cheese, so be careful if you share this dish with your friends
Step 4. Add the sauce
If you enjoy spicier nachos, try using your favorite chili sauce. If you're sharing with friends, make sure you don't add too much chili sauce.
Tips
- Use thick potato chips. Thin potato chips may be crunchy and savory, but they won't be able to withstand the weight of the sprinkles and may break easily when you eat them.
- Grate your own fresh cheese. Monterey Jack cheese will melt in the best nachos, while regular cheddar cheese will smell a little.
- Layer your nachos in half. For maximum crunch and stickiness, start with a single layer of potato chips that completely covers the bottom of your plate. Then pour in any toppings that need to be heated and/or melted, such as nuts, ground beef, and cheese. Pour the potato chips back over the top, and repeat with the hot sprinkles before you pop them in the oven and top them off with the cold sprinkles.
- Make it a biteable size. Thinly slice your chicken and cut the meat into small pieces. The ground beef should also be made in small lumps, too.
- Your oven or microwave may cook slower or faster. Just keep an eye on your nachos. Your nachos are done when the cheese is melted.
- You can try experimenting with using sprinkles. Nachos are a great way to use leftover cooked meat.
- When you're done, wash your nachos. These are dirty dishes you don't want to leave until tomorrow morning. Melted cheese is easy to clean when washed immediately.
