Sausage roll dishes are often described as sausages wrapped in pastry dough. However, for a true sausage roll expert, the picture is not true at all. Puff pastry is commonly used to make shells because of its deliciousness, lightness, and flaky consistency. In this case, the pastry is added with a unique filling consisting of a mixture of ground beef, bread flour, herbs, and spices.
Ingredients
- 2 puff pastry sheets (1 box or approximately 500g)
- 500g beef sausage
- 500g minced meat
- 2 cups white bread flour
- 1/2 tsp chopped sage leaves
- 1/2 tsp curry powder
- 1/4 tsp dry thyme
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp pepper
- Beaten egg or milk for brushing the top of the puff pastry
Step
Step 1. Turn on the oven to the gas mark of 6, 170°C
Place the roasting rack in the center of the oven.
Step 2. Mix the sausage meat, ground beef, breadcrumbs, and spices in a bowl
Stir until all ingredients are evenly mixed.
Step 3. Roll out the pastry until it reaches a thickness of approximately 3 mm
Step 4. Shape the dough into a sausage-like shape by rolling it in the palm of your hand
Place the sausage-shaped dough on the edge of the pastry. Leave a small corner of the pastry so that it can be folded to cover the sausage mixture and form a seal.
Step 5. Apply water on the edges of the pastry and seal it by slightly pinching it with your fingers
Step 6. Cut the sausage rolls into 10 cm lengths, make a line on the top with a knife and spread the beaten egg or milk
Step 7. Place the sausage rolls on a baking sheet lined with parchment paper and bake for 30 minutes until golden brown
Serve hot or cold.

Tips
- Instead of milk, spread the beaten egg yolk on top of the pastry for a shinier sausage roll.
- If you want to follow this traditional Western recipe, you can substitute beef for pork.
