Peas are vegetables consisting of edible nuts and petals. Peas can be served as a side dish or used in single-course recipes, such as stir-fries. Peas are a great vegetable for busy cooks, as they only need to cook for 2-5 minutes.

Part 1 of 3: Preparing the Kapri
Step 1. Pour the peas into a large sieve
Soak the strainer in a bowl of cold water. Stir the peas in the water to thoroughly clean them.
Step 2. Drain the water and wash the peas again
Step 3. Pick 1 tip of a pea
Pull the fibers that connect the two ends of the peas on the outer edges. Then, pluck the other end.
- You may or may not find strands of lint on the edges of the peas.
- Since peas are young peas, some are still soft enough for the fiber to be edible.
- You can also use a small knife to trim the ends of the peas.
Step 4. Perform the blanching process to preserve the peas
If you can't use the peas within 2 days, bring a pot of water to a boil. Boil the peas for 1 minute, then remove and put in ice water.

Dry the peas, and store in the refrigerator for up to 5-7 days.
Part 2 of 3: Sauteed Peas
Step 1. Heat 1 tbsp (15 ml) butter in a frying pan
Turn on the stove, and set the heat to medium. You can also use 1 tablespoon of olive oil or a mixture of butter and olive oil.
- For an Asian flavor, try using a little sesame oil in place of some of the olive oil.
- Use garlic in place of onions.
- Choose pine nuts instead of almonds.
Step 2. Add 25g of sliced almonds to the pan
Stir until toasted.
Step 3. Slice the onion into medium sized pieces
Add the shallots to the pan, along with 0.5 kg of peas.
Step 4. Stir with a wooden spoon for 2 minutes
The peas should be a shiny dark green and still crunchy when removed from the stove.
Step 5. Squeeze 1/2 lemon over the peas dish
Sprinkle salt and pepper.
Part 3 of 3: Steamed Peas
Step 1. Heat a saucepan of water a few centimeters high, while preparing the peas
Add a pinch of salt to the water, and cover the pot.
Step 2. Open the lid of the pot when the water starts to boil
Place the steamer basket in the pot.
Step 3. Pour the peas into the steaming basket

Cover the sauce pan.
Step 4. Set the timer for 3 minutes
Open the lid of the pot, and remove the steaming basket.
Step 5. Season the peas with salt and pepper
Serve immediately.
Tips
- Peas can also be eaten raw, as a crudité or in salads.
- When making the peas stir fry, prepare the peas before you start cooking, but only add the peas for the last 2 minutes before the cooking process is complete.
