Ingredients
- 250 grams of chickpeas
- 150 ml tahini
- 1 tbsp. lemon juice
- 1 liter of water
- Salt
- 1/2 tsp. cumin powder
- 1/2 tsp. paprika powder
- 3 tbsp. olive oil
- 1 tbsp. parsley, coarsely chopped
- 1 lemon, squeeze the juice
- 1/2 green chili, coarsely chopped
Step
Step 1. Soak chickpeas
Put the beans in a bowl, pour enough water to cover all the nuts. After feeling the amount of water is sufficient, add another about 2 cm. water into a bowl; Soak chickpeas overnight. The next morning, the beans should look rounder and larger in size.
Step 2. Cook the beans
Put a pot of water on the stove, pour the beans that have been soaked overnight into it. After that, add a little more water and cook the beans over high heat. As you cook the beans, you will notice the appearance of foam on the surface of the water. Remove the foam with a vegetable spoon. After that, reduce the heat, cover the pot, and re-cook the beans for 1.5 hours. Even if the pot is covered, make sure you leave a little gap to let out the hot steam that builds up as the beans cook. If the water dries up but the beans aren't cooked, add more water. Ripe nuts should be soft, tender, and easy to crush with a spoon.
Step 3. Make hummus
Place two spoonfuls of nuts in a bowl, set aside. After that, put the remaining nuts in a blender and process until the texture resembles a soft, thick, and not lumpy paste. Repeat the process until the beans run out. After that, transfer the bean paste to a bowl.
Step 4. Season the hummus
In a bowl of bean paste, add lemon juice, tahini, and salt; stir well. If necessary, add a little water so that the texture of the bean paste is not too thick; stir again. Adjust the amount of salt and lemon juice to your taste!
Step 5. Make a side dish from chickpeas
Now, go back to some of the beans you set aside. To a bowl of beans, add paprika powder, cumin powder, 1 tbsp. lemon juice, olive oil, chopped green chilies, chopped parsley, and a pinch of salt. Stir until all ingredients are evenly mixed.
Step 6. Serve and enjoy your delicious homemade hummus
Place two large scoops of hummus on a serving plate. Using the back of a spoon, flatten the hummus in a circular motion until a hole forms in the center. In the hole, place the whole chickpea mixture and the various spices you just made.
Tips
- If stored in an airtight container and refrigerated, the hummus will stay fresh for 2-3 days.
- If your time is limited, don't hesitate to use canned chickpeas even though they won't taste as good as fresh chickpeas.
