Fried Whole Chicken Thighs
- 8 pieces of whole chicken thigh
- 5 tablespoons olive oil, separate
- 4 teaspoons kosher salt
- 3 tablespoons finely ground black pepper
- 2 tablespoons cayenne pepper powder
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 teaspoon dry mustard powder

- 2 L chicken stock
- 1 leek
- 1 yellow onion
- 3 carrots
- 3 stalks of celery
- 4 cloves garlic
- 6 whole chicken thighs

Grilled Whole Chicken Thighs
- 6-8 pieces of whole chicken thighs
- 4-5 tablespoons of olive oil

Method 1 of 3: Fried Whole Chicken Thighs
Step 1. Season the chicken
Mix the seasonings with 3 tablespoons of olive oil and rub the seasonings on the surface of the chicken to add flavor. Let the chicken soak up the spices for at least an hour in the refrigerator before you fry it. The longer you let the spices soak in, the deeper and stronger the flavor of your fried chicken will be.
Step 2. Heat a skillet with olive oil over medium heat
Place at least 2 tablespoons of olive oil in the skillet, until it is just enough to coat the bottom. Wait for the oil to sizzle, which is about 1-2 minutes.
Step 3. Put the chicken in the pan and leave it for 5-10 minutes
Fry the chicken until the bottom changes color and becomes crispy brown.
Step 4. Turn the chicken over and cook the rest
Cook the chicken until the rest of the chicken is the same color and consistency as the first. To check for doneness, you can cut off the thickest part of the chicken thigh. The fat will flow out clear and the chicken will have turned a cloudy white color - no longer pink.
Step 5. Remove the chicken from the pan and let it cool
Place on a plate for at least 10 minutes to cool.

Method 2 of 3: Boiled Whole Chicken Thighs
Step 1. Prepare the broth
To prepare the broth, finely chop the scallions, onions and garlic. Then place the stock pot on the stove over medium-low heat and add the olive oil to it. Then put the chopped carrots, celery, and bay leaf into the pot.
Step 2. Cover the pot and let it simmer for an hour
When it boils, add salt and pepper to taste. Then, lower the heat to between 76 - 82 C.
Step 3. Add the whole chicken thighs to the broth
Gently stir the chicken in the broth if the pieces come into contact with each other. Do not let there be a raw part in it, due to sticking with other pieces of chicken thigh during cooking.
Step 4. Cook the chicken for 25 - 30 minutes or until tender
Make sure the inside temperature of the chicken thighs reaches 74º C before you eat. Once cooked, place on a plate, let cool for 5-10 minutes.
Step 5. Serve
Enjoy this boiled chicken without any side dishes or with vegetables or mashed potatoes.
Method 3 of 3: Grilled Whole Chicken Thighs
Step 1. Preheat your oven to 204°C
Step 2. Coat the bottom of the pan with olive oil
You should use 2-3 tablespoons of olive oil for this.
Step 3. Prepare the chicken
Rinse the chicken with water and pat dry with paper towels. Then apply a little olive oil on top to prevent it from scorching and give it a more delicious taste. After that, sprinkle both sides with salt and freshly ground black pepper.
Step 4. Arrange the chicken pieces on the baking sheet with the skin side up
Leave some space between the chicken pieces so they don't stick together on the pan.
Step 5. Cook the chicken for 30 minutes

Step 6. Lower the temperature to 176°C and cook the whole chicken thighs for another 10 - 30 minutes
You should cook the chicken for about 14 - 15 minutes for every pound of chicken. Cook until the clear fat comes out and is no longer pink when the meat is pierced with a knife. The interior temperature of the chicken should reach 74º C. If the chicken pieces haven't turned brown to your liking, you can broil them for the last 5 minutes.
Step 7. Remove the whole chicken thigh
Remove the chicken thighs from the baking sheet and place them on an aluminum plate and cover with foil. Let it sit for 5-10 minutes before serving it.
Step 8. Serve

Tips
- The meat won't be as tender as before once frozen, even if it's only for a few hours.
- Organic chicken should smell like corn or any food given to it.
- If you're cooking bird or poultry, this method works well, except that you should stop cooking when the meat is medium rare. Unless, you're not sure about its cleanliness, then you should cook it until it's crispy or better yet: give it to your pet.
