Cooking fish with breadcrumbs is a way of cooking fish that will make for a delicious dish. There's nothing better than crunchy, salty, and perfectly cooked food to enjoy for dinner. But how to make fish as good as in a restaurant? Part 1 of 2: Basic Steps
Step 1. Prepare the ingredients
The basic ingredients you will need are fish, flour, eggs and breadcrumbs. If you are using frozen fish, thaw it first. You should also rinse the fish in cool, clean water to remove any scales or anything that may have remained. If you need to make your own breadcrumbs, make it with the ingredients you have. The finer the breadcrumbs, the better the outer layer will be. Crack an egg or two into a bowl and add a little milk and water to make the egg mixture soft. For the basic fried fish, prepare the following ingredients:
- Fish filet of choice. White fish such as tilapia or cod are the best choices for breaded cooking.
- Flour
- Bread flour, season to taste
- 1-2 eggs, beaten
- Milk or water
Step 2. Put the ingredients in a separate bowl
Put the breadcrumbs and other complementary flours in one bowl, the regular flour in another, and the eggs in another. It's a good idea to put them in the order in which they are used. On one side of the pan, place the flour, eggs and breadcrumbs next to the pan.
Season your breadcrumbs if you want the flour to be seasoned. A pinch or two of salt and pepper should suffice. But if you want other spices, add according to taste. You can also season plain flour
Step 3. Coat the fish with flour
Place the filets in the flour bowl and coat them in the flour evenly with your hands. This step is quite important so that later all parts of the fish can be wrapped in breadcrumbs properly.
Step 4. Place the fish in the bowl with the egg mixture, then into the bowl with the breadcrumbs
Do not drop the fish into the eggs and soak them. Simply dip briefly and immediately transfer to a bowl of breadcrumbs. Coat the fish in breadcrumbs and use your hands to make sure all parts of the fish are completely coated.
Step 5. Put the flour that has been wrapped in breadcrumbs into the pan
Fried fish that has been wrapped in breadcrumbs. Heat enough oil over medium to high heat, then fry the fish for three to five minutes each side. Flip the fish when one side has turned golden brown. The frying process shouldn't take long, so watch the fish closely.
- Wait until the oil is hot enough before adding the fish. You should be able to feel the heat of the oil when you place your hand about 7 to 12 cm on the pan and the oil explodes when you drop the water into it. Don't put too much fish in the pan at once or you'll drop the temperature of the oil drastically. Frying fish in less hot oil will make the fish oily and moist.
- Alternatively, you can grill the fish. Simply place your floured fish on a heat-resistant plate or container, then bake at 191 degrees Celsius for 15 to 20 minutes and flip the fish halfway through the process.
Step 6. Remove and serve
This breaded fish will taste even better if it is complemented with lemon or lime juice, tartar sauce, vinegar, or other accompaniments. Serve with french fries if you want to serve classic fish and chips, or serve it healthier with rice and green vegetables.
Part 2 of 2: Another Alternative
Step 1. Try other flour combinations
Fish is a food that goes well with a wide variety of combinations and types of flour. You can use potato chip crumbs, cornstarch or even corn flake cereal depending on what's available. Experiment to see which combination you like best.
- You can skip the crumbs and dip the fish into the flour twice. If you're out of breadcrumbs and lazy to make or buy new, plain, seasoned flour can also be a last resort.
- Use cornmeal for South American-style fried fish. The cornstarch makes for a super crispy, golden brown fish that's hard to beat. If you have cornstarch, give it a try.
Step 2. Put the mixture in the bag
Usually, when frying fish, people don't use egg batter and prefer to fry the fish immediately after being floured. If you're making a large batch, or want an easier cleaning process, you can put the seasoned flour AND another breadcrumb mixture in the bag, add the fish fillet, and close the bag. Shake the bag until the fish is evenly coated with flour and immediately drop into the pan.
Step 3. Try using beer batter for a thick, crunchy outer layer
The dough that is often used in Europe is usually wet dough, not dry bread flour, delicious and easy to make. To make the wet dough, mix the following ingredients:
- 1.5 cups measuring flour
- 1 teaspoon baking soda
- 1.5 teaspoon salt
- 0.5 cans or bottles of beer
- Seasoning to taste
Step 4. Use lemon or lime juice to reduce the fishy taste and smell
If you're cooking fish that's quite fishy or don't like the fishy taste and smell, adding lemon or lime juice to the egg mixture can slightly mask the fishy taste and smell.
Step 5. Done
Tips
- Dip the fish in mayonnaise or tartar sauce before dipping into the breadcrumbs alternatively.
- You can also replace the breadcrumbs with whatever crumbs you think would taste good.
- You can also use grated parmesan cheese instead of breadcrumbs.
Warning
Be careful when putting fish in hot oil. Don't let your body parts get exposed to hot oil explosions. Reduce the heat slightly when the fish has started to cook
