Cod is a delicious fish that will melt in your mouth so soft when cooked properly. For its health benefits and to preserve its taste, although there are many variations of recipes, grilling is considered the best way to cook them. The texture of this fish can be very soft, but for the best results, it's important to make sure the juice doesn't run out during the roast.

Step
Method 1 of 2: Roasting Cod
Step 1. Preheat the oven to 205 degrees Celsius first
If you are using a metric oven set it to 205 degrees Celsius.
Step 2. Wash the fish in cold water
After washing, dry with a paper towel or cloth to absorb excess water, especially if the cod is frozen and freshly thawed.
Step 3. Tear off the aluminum foil twice the size of the fish
Repeat this step for each piece of fish to be grilled. The fish will be wrapped in foil as it cooks.
Step 4. Lay one piece of fish diagonally on the aluminum foil
Fold the edges of the foil slightly to keep the fish juice from escaping from the foil as you season the fish.
Step 5. Add spices according to your taste
You can add any spices to your liking, but the best choices for roasted cod include salt, pepper, parsley, tarragon, red chilies, thyme, rosemary, and lemon. The taste of cod is relatively mild so you have a wide selection of spices to try.

Step 6. Spread a thin layer of butter on the surface of the fish
Butter contains oils and fats needed for the cooking process. For a healthier option, brush the fish with olive oil.
Step 7. Fold each side of the foil to form an envelope that wraps around the fish
The fish should be tightly wrapped so that it cannot move or shift in the aluminum foil wrapper.
Step 8. Place the foil-wrapped fish on a cookie sheet or shallow pan
Arrange the fish side by side and not stacked to ensure the fish is cooked perfectly.
Step 9. Bake the fish for 20 minutes
No need to bother turning the fish over as the aluminum foil will ensure that the fish cooks evenly.
Step 10. Remove from oven and check each foil package to make sure the fish is cooked through
Ripe fish is white, tough and crunchy. Serve and enjoy!
Method 2 of 2: Making Recipe Variations
Step 1. Try a recipe with a light lemon spice
Clean the cod as usual, brush with lemon and olive oil, then rub it on the skin gently. Finely chop 2-3 cloves of garlic and a teaspoon of fresh thyme, then sprinkle on both sides of the fish until smooth. Sprinkle salt, pepper and paprika for seasoning. Wrap in aluminum foil and cook as usual.
- Add chopped chilies to make it a little spicy.
- You can use a pinch of fresh garlic instead of ground garlic.
Step 2. Try a Mediterranean-style condiment with olives, capers, and lime
This delicious recipe goes well with pasta or couscous. To make it, season the fish in aluminum foil with salt and pepper. Then, add the chopped olives, capers, 2-3 lime wedges, and a pinch of chopped fresh rosemary. Drizzle with olive oil, cover tightly in foil, and enjoy. You will need:
- 1/4 cup kalamata olives
- 1/4 cup capers (drained)
- 2-3 limes
- 2-3 teaspoons of fresh rosemary.
Step 3. Try a thin layer of bread for healthy oven-fried fish
For this recipe, you don't need to use aluminum foil. Place the fish on a heat-resistant glass dish. Brush each piece of fish with olive oil, dip into the mixture below. Lightly press the fish in the breadcrumbs to coat it, then cook in the pan for 12-15 minutes until done.
- 1 1/2 cups breadcrumbs
- 1/2 cup chopped parsley
- 2-3 cloves of garlic finely chopped
- The rind of one lemon
- Salt and pepper, to season.
Step 4. Cook the fish in seasoned butter for a rich taste
Pour 1/2 cup flour in a shallow pan and season flour with salt and pepper, 1/2 teaspoon each. Melt three tablespoons of butter and mix it with three teaspoons of lemon juice, then dip the fish into this butter mixture. Dip the soaked cod in the flour so that both sides are coated in flour. Cook in a shallow pan for 12-15 minutes, brushing with remaining butter mixture on top.
- You can add cayenne pepper powder to the butter mixture for a nutty flavor.
- Garnish the cooked fish with chopped parsley and lemon wedges.
