White radish is an ingrained food ingredient for most of the citizens of the European continent. This vegetable is even popular to the United States and has been processed in the form of liquor. Today, white radish is one of the most delicious dishes of winter. You can roast it with rosemary to enhance its distinctive taste or accentuate its natural sweetness with a honey-based spread.
Ingredients
- 1 kg white radish
- Salt and pepper to taste
- Assorted spices and herbs of choice
- 125 ml olive oil (savory recipe)
- 30 ml olive oil & 80 ml maple syrup or honey (sweet recipe)

Method 1 of 2: Roasting Savory White Radishes
Step 1. Preheat your oven
Set the oven temperature to 200 degrees Celsius.
Step 2. Wash the white radish
Scrub the turnips under running water to remove any adhering dirt. Cut off the roots and leaves on top if they are still attached.
Step 3. Boil the radish until half cooked so that the texture is soft
You can roast the radishes right away, but if you boil them first, they will be softer in texture. To do this, put whole white radishes, or turnips that have been cut in half in boiling brine. Simmer for 8 minutes or until the radish has softened. Rinse in cold water until the radishes stop steaming, then pat dry.
- This step is important for ripe radishes over 2.5 cm in diameter that have a tough, fibrous texture. If you don't want to boil them first, remove the horseradish roots before cooking.
- Boiling the radish will make it easier for you to peel the skin by hand. If you don't want to boil it, leave the skin on because that part retains the distinctive taste of white radish.
Step 4. Cut the white radish into equal sizes
Cut the turnips into 7.5 cm lengths from the thick end to the tapered end. Alternatively, cut the turnips into squares to make them cook faster.
Step 5. Add oil and seasonings
Drizzle white radish with olive oil or other vegetable oil. Add the oil, then use your clean hands to spread it all over the radish. If you want, you can also add salt and pepper to taste, as well as other savory seasoning mixtures. Here are some ideas to try:
- Crushed rosemary, thyme, and/or garlic.
- A pinch of coriander and cumin.
Step 6. Put the white radish into the pan
If you are using raw radishes, use a sheet of foil to cover the pan, and keep the radishes moist and not hard. There is no need to use a cover if you are roasting boiled turnips.
Step 7. Bake until lightly browned
White radishes are ready to eat when they are browned or appear to form a caramel layer at some point, but are not wilting. This usually takes 45 minutes, or 20 minutes if you pre-boiled the radishes. Check the radishes before the end of cooking time as the cooking time for the radishes varies depending on the size of the ingredients used.
For a more even brown color, check the radishes every 10 or 20 minutes, then flip the parts that stick to the pan
Step 8. Serve as soon as possible
Like potatoes, white radishes have a dry texture that goes well with butter, cream, yogurt, or crme fraîche. As an option, add fresh herbs that go well with the horseradish seasoning, such as chopped coriander leaves to complement the coriander and cumin seeds that were used earlier.
You can store the cooked white radish in the oven on a low setting while waiting for the entire dinner dish to be ready
Method 2 of 2: Roasting Sweet Spiced White Radish
Step 1. Preheat your oven
Set the temperature to reach 200ºC.
Step 2. Prepare the radishes
Wash the white radish and remove any adhering dirt. Cut both ends of the radish, then slice it to produce equal-sized radish pieces.
Remove any roots attached to the large white radish
Step 3. Place the radishes on a baking sheet lined with foil
The honey and maple syrup will stick to the pan during the cooking process. Lining the pan with foil will make it easier to clean.
Step 4. Add the rest of the ingredients
Mix 1 tablespoon olive oil, 3 tablespoons honey or maple syrup, and a pinch of salt and pepper (If you want to use an accurate measure, prepare 30 ml of olive oil and 80 ml of honey or maple syrup to season 1 kg white radish). Pour the mixture into the radishes and stir to coat all the parts.
- If the honey seems cloudy or too thick, heat it until it's runny enough to pour.
- You can use maple syrup, but it won't taste the same. Avoid using non-sugar ingredients as you will need sugar to caramelize the surface of the radishes.
Step 5. Bake until tender and golden brown
Depending on the size of the radish, this process can take anywhere from 20 to 40 minutes. Turn the radish pieces once during the cooking process, when one side is brown.
