Veggie burgers can be made with beans, rice, soybeans, mushrooms, and other ingredients that can be formed into slabs and grilled or fried. Some people prefer veggie burgers that taste as close to beef burgers as possible, while others prefer the taste of fresh beans and vegetables for their unique qualities. Experiment with these three simple veggie burgers to find your favorite type of burger: the black bean burger, the lentil burger, and the tempeh burger.
Ingredients
Black Soybean Burger
- 2 cups cooked black beans (1 cup = 240 ml)
- 2 tablespoons olive oil
- 1/2 cup onion
- 1 clove of garlic
- 1 cup chopped mushrooms
- 1/2 cup chopped green bell pepper
- 1 tablespoon soy sauce
- 1 tablespoon mayonnaise
- 1 tablespoon soy sauce
- 2 teaspoons steak seasoning
- 1/2 tsp salt
- 1 cup breadcrumbs
- 1/2 cup rice
Lentil Burger
- 1 1/2 cups cooked lentils
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 3 medium carrots, finely chopped
- 3 cloves garlic, chopped
- 1 teaspoon cumin powder
- 1/4 teaspoon red chili
- 3/4 cup breadcrumbs
- 2 large eggs, beaten
- 1/2 tsp salt
- 1 cup plain yogurt
Tempe Burger
- 453, 6 g tempeh
- 1/2 cup soy sauce
- 1/4 cup extra virgin olive oil
- 1 small onion, chopped
- 3 cloves garlic, chopped
- 1 tablespoon brown sugar
- 1 teaspoon dry thyme
Step
Method 1 of 3: Black Soy Bean Burger
Step 1. Heat a tablespoon of olive oil in a frying pan
Place the skillet over medium heat and heat the oil until it starts to simmer slowly.
Step 2. Add the onions and green peppers to the pan
Sauté the onions and peppers, stirring occasionally, until the onions are translucent and the peppers are soft. This will take about five minutes.
Step 3. Add the mushrooms to the pan
Sauté the mushrooms with the onion and garlic and cook for about three minutes, until the mushrooms are soft and have released their liquid.
Step 4. Add the garlic and cook for another minute
If you add garlic too quickly, it will burn; Garlic only needs to cook for one minute after the vegetables are cooked.
Step 5. Turn off the fire
After the vegetables are cooked, the rest of the ingredients will be mixed in a food processor.
Step 6. Transfer the mixture to a food processor
Be careful, because the contents of the pan are still hot.
Step 7. Add the rest of the ingredients
Put black beans, soy sauce, mayonnaise, soy sauce, bread crumbs, rice and spices into the appliance.
Step 8. Blend the mixture until it becomes crumbly and coarse
Just a few rounds, don't take too long. You want the texture to resemble ground beef, so be careful not to knead the mixture for too long, as this can result in a runny dough.
Step 9. Shape the mixture into a slab
Use a spoon to scoop out the mixture and shape it into a palm-sized slab using your hands. Make the slab large enough to fit on a standard hamburger bun.
Step 10. Heat the remaining oil in a frying pan
Let the oil get hot enough; the oil is ready when it starts to boil.
Step 11. Fry the slabs
Place the slabs in the skillet and fry each side for two to three minutes, or until the outsides are brown and crispy.
Step 12. Serve the veggie burger
This plate is delicious served with hamburger buns and all the classic burger accompaniments such as: ketchup, mustard, pickles, lettuce and tomato.
Method 2 of 3: Lentil Burger
Step 1. Heat a tablespoon of olive oil in a frying pan
Place the skillet over medium heat and heat the oil until it starts to simmer slowly.
Step 2. Add the onions and carrots to the pan
Sauté the onions and carrots, stirring occasionally, until the onions are translucent and the carrots are soft. This will take about five minutes.
Step 3. Add the garlic and cook for another minute
If you add garlic too quickly, the onions will burn; Garlic only needs to cook for a minute after the vegetables are cooked.
Step 4. Turn off the fire
After the vegetables are cooked, the rest of the ingredients will be mixed in a food processor.
Step 5. Transfer the mixture to a food processor
Be careful, because the contents of the pan are still hot.
Step 6. Add the rest of the ingredients
Add eggs, yogurt, spices and breadcrumbs.
Step 7. Blend the mixture until it becomes crumbly and coarse
Just a few rounds is enough. Be careful not to knead the mixture for too long, as this can result in a runny dough that will spread instead of retaining its shape as it cooks.
Step 8. Shape the mixture into slabs
Use a spoon to scoop out the mixture and shape it into a palm-sized slab using your hands. Each should be about 1/4 cup.
Step 9. Heat the remaining oil in a frying pan
Let the oil get hot enough; the oil is ready when it starts to boil slowly.
Step 10. Fry the plates
Place the slabs in the skillet and fry each side for two to three minutes, or until the outsides are brown and crispy.
Step 11. Serve the veggie burger
This lentil burger tastes great with a classic sauce or with Greek yogurt sauce to contrast the spices.
Method 3 of 3: Tempe Burger
Step 1. Slice the tempeh into round pieces
Tempeh is usually available in cubes, making it easier to slice it into squares. Round the corners if you prefer your burger to be round. Each piece should be 1.27 cm thick.
Step 2. Place the tempe pieces in the pan
Use a 29.9 or 30.5 cm baking pan, depending on which size is large enough to hold all the tempeh pieces in one layer.
Step 3. Preheat oven to 191°C
Step 4. Make the marinade mixture
In a small bowl, whisk together soy sauce, olive oil, brown sugar, and thyme.
Step 5. Pour the marinade over the tempeh slices
Make sure each slice of tempeh is submerged in plenty of spices.
Step 6. Bake tempeh for 30 minutes
During this time, the marinade will seep in and soften the tempeh.
Step 7. Flip the tempeh and bake for 30 minutes
By the time you finish baking the tempeh, all the spices should have been absorbed. If you still see liquid in the pan, continue roasting the tempeh until the liquid is absorbed.
Step 8. Remove the pan from the oven
Use a spatula to loosen the tempeh burgers from the pan.
Step 9. Serve the tempeh burger
Place the tempeh chips on a burger bun and serve with lettuce, tomatoes and cheese.
