Pumpkin pie is a seasonal favorite that goes beyond Thanksgiving. This pie is perfect for any occasion, or even just to be enjoyed with the family with a cup of coffee. Pumpkin pie is easy to make, and it's healthy and nutritious. Add a little whipped cream on top as an additional garnish. We'll show you how to make it!
Ingredients
- 2 cups cooked pumpkin, canned pumpkin, or mashed pumpkin (unseasoned)
- 2 eggs that have been slightly beaten
- 3/4 cup brown sugar
- 1 tsp cinnamon
- 1/2 tsp ginger
- 1/2 tsp nutmeg or allspice
- 1/2 tsp clove
- 470ml melted vanilla ice cream
- 23cm pie crust
Step
Step 1. Prepare the pie crust
Step 2. Preheat the oven
After you finish the pie crust, preheat the oven to 220°C.
Step 3. Bring together and mix the pumpkin with the egg
Place both ingredients in a large bowl and mix until smooth.
Step 4. Mix dry ingredients
In a medium bowl, combine brown sugar, cinnamon, ginger, nutmeg, and cloves, stirring until smooth.
Step 5. Add the spices to the pumpkin mixture
Pour the previously mixed spices into the pumpkin and egg mixture, and mix thoroughly until all the ingredients are evenly mixed.
Step 6. Add the melted ice cream
Pour the melted ice cream into the pumpkin mixture. Stir until smooth so that the white streaks from the ice cream disappear.
Step 7. Pour the mixture into the pie crust
Step 8. Bake at 220°C for 15 minutes
Step 9. Reduce the oven temperature to 180°C
Bake for another 45 minutes, or until a knife inserted into the pie comes out clean. Watch every 10-15 minutes or so to make sure the crust doesn't overcook. If the pie crust starts to look a little brown, cover it with a pie crust, or wrap the crust in foil.
Step 10. Remove the pie from the oven when it is cooked
Let cool until the custard hardens.
Step 11. Serve with whipped cream and a smile
Tips
- You need to place the pie on a rack after it's finished baking so it won't overheat your refrigerator.
- To make Grape Nut Pumpkin Pudding, you don't need to use a pie crust, but rather grease a pie plate or heatproof container with butter and pour about 1/2 cup of Grape Nuts into the dish before adding the pumpkin custard mixture. Bake as usual.
- If you have any remaining dough, flatten it into a square shape, butter it on top, sprinkle cinnamon and brown sugar over the butter, roll it into a ball, and slice it into small balls. When you reduce the temperature while baking the pie, pop this cinnamon treat in the oven, and bake until the crust is golden brown-about 15 minutes.
- For another unique yet delicious taste, you can even add blueberries or other fruit to the pumpkin mixture.
- Add toppings like cherries or apples to give your pie a unique flavor. Many people use blueberries as a topping for blueberry-pumpkin pie, or "blumpkin" as it is often called.
