Mango is a nutritious tropical fruit known for its sweet and starchy consistency. Mangoes have high levels of fiber, vitamin A, and natural sugars, making them perfect for snacking. The best way to preserve ripe mangoes is to dry them for storage in a dehydrator or oven.

Part 1 of 2: Slicing Fruit
Step 1. Buy 2 to 40 mangoes to dry
The number of mangoes purchased must match the number of drying trays you have. If you plan to do this in the oven, two or three mangoes will fill the baking tray.
Step 2. Place the mango on the kitchen counter to ripen if the mango is not yet ripe
If you press the skin of the mango with your thumb, the ripe mango will press inward slightly, while the unripe mango will be very firm when pressed.
Step 3. Purchase a mango slicer from an online distributor or kitchen supply store if you plan to dry a large batch of mangoes
Filling mangoes is a painstaking process and a mango slicer will reduce the chances of you injuring yourself.
Step 4. Slice the mango on a cutting board with the ends facing down
Slice about 0.6 cm from the center line down to separate the "cheeks" of the mango. Rotate the "cheeks" of the mango so that the skin is facing downwards, then slice parallel lines from top to bottom.

Be careful not to cut the skin on the back of the mango.

Turn the mango "cheeks" over and peel off the skin.
Step 5. Repeat, cut both cheeks of each mango and leave the mango slices in the bowl for a while
Part 2 of 2: Drying Mangoes
Step 1. Remove the dryer tray from the food dryer
Try to keep the time between slicing the mango and placing the drying tray into the dryer not too long, so that the nutrients of the fresh mango can be preserved.
Step 2. Arrange the mango slices in parallel lines on the drying tray
Make sure there is space between the mango slices for air to pass through.
Step 3. Set the food dryer at 54 - 57 degrees Celsius for 10 to 14 hours
Step 4. Do this the other way, by placing the mangoes in the oven with each other on top of a tray lined with parchment paper on the lowest setting
Open a small gap in the oven door to let air in. Dry the mangoes for 10 to 14 hours.
Step 5. Remove the dried mango from the tray
Place the dried mangoes in an airtight glass jar or in a plastic bag. Store mangoes in a cool, dry, dark place to preserve their freshness.
