Step
Method 1 of 5: Simple Fried Pickles
Step 1. Heat vegetable oil in a large skillet to 375°F (190°C)
Fill a skillet with about 1 inch (2.5 cm) of vegetable oil. Test the temperature using a thermometer for frying. Alternatively, you can dip a bit of flour in the oil to see if it immediately turns brown and foamy. If so, it means the oil is ready.
Step 2. Make the dough
Combine 1 cup flour, 1 cup cornstarch, and 3 lightly beaten eggs in a large bowl. Stir the ingredients until you get an even dough for pickles.
Step 3. Sprinkle pickle slices with salt and pepper to taste
Step 4. Dip each pickle slice into the batter
Use tongs or a fork to dip the pickle into the batter and swing it around until it's completely covered in batter. Hold on top of the dough for a second or two until more of the batter drips back into the bowl.
Step 5. Fry a bunch of pickles
Once you've put the batter in a pot of pickles, it's time to start frying. Dip the pickles into the hot oil using a mesh or tongs. Fry until crisp and golden brown, which should take about three minutes, depending on the size of the pan. The pickles are cooked when they float on the surface of the oil. After one group of pickles is fried, move on to the other group.
Avoid filling the pan as the temperature of the oil will drop. Pickles will be mushy instead of crunchy
Step 6. Remove the pickle from the oil with tongs
Place on a plate lined with thick paper towels to absorb excess oil.
Step 7. Serve
Serve fried pickles straight with a small bowl of ranch dressing for dipping.
Method 2 of 5: Spicy Fried Pickles

Step 2. Heat the oil
Heat 1 inch (2.5 cm) of vegetable oil until the oil is 375°F (190°C).
Step 3. Make the dough
To make the dough, beat cup all-purpose flour, 1 Cjun seasoning, tsp. Italian seasoning, 1/4 tsp. cayenne pepper, 1/2 tsp. salt, and 1/2 cup water until well blended.
Step 4. Place the pickles on a thick paper towel and pat dry
Pickles should be dry before frying for best results.
Step 5. Put half of the pickles into the dough
Throw until completely covered with dough.
Step 6. Put the pickles in the oil
To do this, scoop the pickles out of the batter with a slotted spoon, one at a time, so that more of the batter can drip back into the bowl. Put them in the oil one by one.
Step 7. Fry until golden brown
This takes 1-2 minutes.
Step 8. Remove the pickles
Remove the pickles from the pan with the same slotted spoon and place them on a paper towel to drain.
Step 9. Repeat the process with all the pickles and dough
Step 10. Serve
Once the pickles are ready, serve them with the sauce you've made. You can also serve it with some celery sticks.
