Ingredients
Cooking Rice in a Pot
For: 4 servings
- 250 ml. Arborio rice
- 500 ml. water
- 1 tbsp. olive oil or margarine
- 1 tsp. salt (optional)
Cooking Rice in the Microwave

Making Simple Risotto
For: 4 servings
- 250 ml. Arborio rice
- 1 tbsp. olive oil
- 125 grams of chopped onion or red onion
- 1/2 tsp. minced garlic
- 750 ml. chicken broth
- 60 ml. dry white wine
- 250 grams of Parmesan cheese
- 1/4 tsp. salt
- 1/4 tsp. ground black pepper
Making Arborio Rice Pudding

- 125 ml. Arborio rice
- 250 ml. water
- A pinch of salt
- 1/2 tbsp. butter
- 250 ml. full cream milk
- 4 tbsp. sugar
- 1 tsp. vanilla extract
- 1/4 tsp. cinnamon powder

Method 1 of 4: Cooking Rice in a Pot
Step 1. Bring the water to a boil
Pour water into a medium saucepan, cook over medium heat until it boils.
- It's a good idea to use a thick pot as you won't be able to stir the rice too often while it's cooking. If using a thin pan, it is feared that the rice will burn prematurely.
- Reduce or increase the portion of water as much as 60 ml. to produce a softer or drier rice texture. Be aware that changing the amount of liquid will also affect the cooking time.
Step 2. Add oil and salt
Once the water boils, add the oil (or margarine) and salt if desired.
After adding the oil and salt, the boiling point of the water should decrease. However, usually the water will come back to a boil after 30 seconds. When the water is boiling again, move on to the next step
Step 3. Put Arborio rice in boiling water
Cover the pot and reduce the heat.
After adding the rice, the boiling point of the water should also decrease slightly. Stir in the rice while waiting for the water to come back to a boil. Once the water returns to a boil, reduce the heat to the required instructions
Step 4. Cook for another 20 minutes
Cook the rice for 20 minutes or until all the liquid is absorbed into it; make sure you don't stir the rice while the cooking process is going on.
- Do not open the lid of the pot while the cooking process is in progress as it will release the steam needed to cook the rice. Do not also stir the rice because it risks destroying the grains of rice.
- Once cooked, the texture of the rice should be soft enough to eat but still tough or chewy in the center (which is known as "al dente").

Method 2 of 4: Microwave Cooking Rice
Step 1. Mix all ingredients
Put the rice, water, and oil (or margarine) in a 2 liter heatproof container. If you want, you can add a pinch of salt. Stir well.
- Make sure you only use 250 ml. Arborio rice for a single microwave cooking process.
- Add about 60 ml. water if you prefer a softer rice texture; instead, subtract 60 ml. water if you prefer a dry rice texture. The rice cooking time should be the same, but make sure you keep an eye on the process. If the rice looks precocious, feel free to remove it from the microwave.
Step 2. Turn on the microwave and cook the rice for 5 minutes on full power
Cover the container and put in the microwave, cook for 5 minutes on 100% power.
- If the rice container you are using has a special lid, leave a little room for the heat and steam to escape from the bowl.
- If the rice bowl you are using does not have a special lid, use microwave-safe plastic wrap to cover the surface.
Step 3. Reduce the microwave power to half and cook for another 15 minutes
Set the microwave power to 50% and continue cooking for 15 minutes.
- Understand that cooking time is very dependent on the size of your microwave power; therefore, make sure you provide extra supervision at the last minute. Remove the rice when all the liquid has been absorbed into it.

Method 3 of 4: Making Simple Risotto
Step 1. Heat the broth
Pour the stock into a 3-quart saucepan, heat it over medium heat but don't bring it to a boil.
When small bubbles appear on the surface of the broth, reduce the heat. Make sure the broth stays hot until it's time to use it
Step 2. Heat the oil
Pour the oil into a 4 liter pot, heat it over medium heat.
Heat the oil for 30-60 seconds before moving on to the next step. The temperature of the oil should be hot enough but not to smoke
Step 3. Saute the onions
Add the chopped onion (or shallot) to the hot oil, stirring for 4 minutes or until it has softened in texture.

Step 4. Saute the garlic
Add the minced garlic to the sauteed onions, stir again for 30-60 seconds or until fragrant.

Step 5. Add rice and salt
Add the Arborio rice to the onion and garlic stir fry. Sprinkle salt to taste, stir again.
Keep stirring for 2-3 minutes. Each grain of rice should be coated with oil and salt, while the edges will start to look transparent (make sure the center of the rice remains opaque white)
Step 6. Take the stock and white wine using a vegetable spoon
Pour about 125-185 ml. warm broth to the surface of the rice, followed by a dash of white wine. Cook for a few minutes or until all of the liquid has been absorbed by the rice.
- Stir well while the cooking process takes place. Make sure the rice that is on the edge of the pan is returned to the center so that it cooks evenly.
- After a while, the rice grains should appear to stick together. To check the texture, try scooping the rice from the bottom of the pot with a wooden spoon; Instead, the rice will stay on the surface of the spoon for a few seconds before falling back down.
Step 7. Slowly, pour in the remaining liquid
Gradually pour in the remaining stock (approximately 125-185 ml. at a time), followed by the white wine.

Place all four ingredients in a separate saucepan, heat over medium heat but do not boil.

Reduce heat and continue cooking for 10-15 minutes.
