Sticky rice has a unique texture and taste. This rice is commonly used in many Japanese and Thai dishes. Unfortunately, this rice is not always easy to find. There are several ways to cook plain, non-sticky rice so that it becomes more sticky, and this article will cover them. In addition, you will also get two recipes on how to make the famous “sticky rice” dish using plain rice.

Step
Step 1. Know what to expect from these recipes
Real sticky rice can't really be replaced. It is a type of rice (like brown rice) and not a dish (a kind of fried rice). The taste and texture of this recipe will be different because you are using plain rice. Also, be aware that if you cook plain rice so it's stickier or mushy, it's still not sticky enough to make sushi nigiri.
Step 2. Consider partial replacements
Do you want to make sticky rice from regular rice because you can't find it in stores? If you can't find sticky rice, try searching for "sweet rice" or "gluten rice". Both are the same
Try looking for another short grain rice or risotto rice. Both have a texture that when cooked (compared to medium and long grain rice). Short-grain rice is stickier after cooking than other types of rice because it contains more starch
Method 1 of 3: Making Regular Rice Stickier
Step 1. Do not wash the rice before cooking
Most of them wash the rice to clean it and remove the flour dust. The starch makes the rice stick together. If you can't cook the rice without washing it first, rinse it once or twice, but not too much until the water is clear. It's best to let some of the flour stay in the rice.
Step 2. Let the rice soak in the pan before cooking
Some people are helped by letting the rice soak so that the results are more sticky. Try soaking for 30 minutes to 4 hours. Discard the water after the rice has finished soaking.
Step 3. Fill a large saucepan with 2 cups (450 milliliters) of water and add a few extra tablespoons of water
Use more water than necessary to make the rice stick together and stick together.
Consider adding a pinch of salt. This will increase the taste of the rice and make it less bland
Step 4. Add 1 cups (300 grams) of short-grain rice or 1 cup (200 grams) of medium- or long-grain rice
Try to use short-grain rice varieties. Short grain rice contains more flour so it is stickier.
Jasmine and basmati rice are medium grain rice
Step 5. Bring water to a boil over high heat
Do not use a pan cover.
Step 6. Reduce the heat after the water boils, and let it sit for 10 minutes
At this point, you can attach the pan cover.
Step 7. Turn off the heat once the rice has absorbed all the water
You will see steam holes in the rice.
Step 8. Leave the pot covered on the stove for another 10 minutes
Rice becomes stickier the longer it is left on. If you make the rice 1-2 days in advance, the rice will be more sticky. If you plan to wait that long, cover the rice and let it sit in the refrigerator so it doesn't dry out or spill.
Step 9. Serve the rice
Transfer the rice to a serving plate. If you want, you can expand them a little with a fork so they don't stick together too much.
Method 2 of 3: Making Sushi Rice
Step 1. Know what to expect
You may be able to achieve a similar taste to sushi rice using the right spices. However, it is difficult to make plain rice to have the same sticky consistency as sushi rice. You can use this recipe to make sashimi, bento, and sushi rolls, but it's not sticky enough to make nigiri.
Step 2. Prepare 2 cups (450 milliliters) of water to boil in a large saucepan
Step 3. Add 1 cups (300 grams) of short-grain rice or 1 cup (200 grams) of medium-grain rice
Try to use short-grain rice varieties as they tend to be more starchy and therefore stickier.
Jasmine and basmati rice are medium grain rice
Step 4. Put the lid on the pot and simmer on low heat for 15 minutes
The water will stop boiling for a few seconds when the rice is added. Wait until the water and rice start to boil again, then reduce the heat and cover the pot tightly. Continue to cook the rice until all the water is absorbed.
Step 5. Combine 4 tablespoons of rice vinegar, 2 tablespoons of sugar, and 1 teaspoon of salt in a small saucepan
Mix everything with a spoon. This will spice up your sushi rice as well as help the rice become more sticky.
Step 6. Bring the sushi rice seasoning to a boil over medium heat
Stir the spices with a fork or small mixer until the sugar is dissolved.
Step 7. Remove the spice pan from the stove
Set aside and refrigerate.
Step 8. Transfer the rice to a glass bowl
During the next few steps, don't use anything metallic so the vinegar doesn't take on the metallic taste.
Step 9. Pour the seasoning over the rice
Do it while the rice is still hot. You don't need to use all the spices if you don't want the flavor to be too strong.
Step 10. Mix the rice with the spices using a wooden spoon
You can use a spatula, but make sure it's not metal.
Try to work in front of a fan, or be fanned by someone. This will help the rice to cool faster
Step 11. Serve the rice while it is warm
Japanese sticky rice is best served warm, but not hot.
Method 3 of 3: Making Mango Sticky Rice
Step 1. Fill a large saucepan with 2 cups (450 milliliters) of water and bring to a boil
Step 2. Add 1 cups (300 grams) of short-grain rice or 1 cup (200 grams) of medium-grain rice
For best results, try using the short-grain type of rice. Short grain rice tends to be more starchy so the yield is better.
Medium grain rice varieties include jasmine and basmati
Step 3. Put the lid on the pot and simmer on low heat for 15-20 minutes
Reduce heat to medium heat. Make sure you keep the pot so that the boiling water doesn't overflow out of the stove.
Step 4. In another saucepan, combine 1 cup (350 milliliters) coconut milk, 1 cup (230 grams) white sugar, and teaspoon salt
Stir everything with a spoon until evenly mixed. It will be used as a seasoning for rice.
To save time. Do it while the rice is cooking
Step 5. Bring the coconut milk mixture to a boil over medium heat
Make sure you stir the mixture occasionally to prevent it from scorching.
Step 6. Stir the coconut milk mixture into the rice once it's done cooking
When the rice is cooked, remove the pot from the stove and remove the lid. Pour the coconut milk mixture into the rice, and stir with a fork or spatula.
Step 7. Let the seasoned rice sit for an hour
Put the lid back on the pot, and store it where it won't be disturbed. This will give the rice enough time to absorb the flavors of the coconut milk mixture.
Step 8. Combine cup (120 milliliters) coconut milk, 1 tablespoon sugar, teaspoon salt, and 1 tablespoon tapioca flour in a saucepan
Stir everything with a spoon. If there is no tapioca flour, cornstarch or arrowroot flour.
Step 9. Bring the sauce to a boil
Make sure you stir occasionally so the sauce doesn't thicken or burn.
Step 10. Prepare the mango
Start peeling the mango. If the mango is ripe enough, you can peel it slightly with a knife, then pull the skin off with your hands. After you peel the mango, cut it in half and remove the seeds. Cut the mango back into thin slices. Repeat this step for the next two mangoes.
Step 11. Spoon rice onto four plates
You can serve more than four dishes, but the portions are smaller.
Step 12. Arrange the mango slices
You can arrange it on the side or on top of the rice. If you put mango slices on top of the rice, try making a fan shape.
Step 13. Drizzle the sauce over the mango and rice
If you want, you can also sprinkle some sesame seeds on top of the sauce.
Keep in mind, the texture of your rice may not be the same as traditional dishes because it doesn't use sticky rice
Tips
- Try to soak the rice in water for 3 minutes to 4 hours. Thus, the rice cooks faster.
- Short grain rice is not the same as sticky rice. However, the high starch content compared to other types of rice makes it tend to be more sticky after cooking.
- Sticky rice and sushi rice are two different types. Sticky rice originates from Thailand and is usually used for desserts. Sushi rice is used to make sushi. Since both of these rices have a sticky texture, this article discusses how to make them both.
- A trick that many cooks use to measure the exact moisture content is to place it just above the height of the rice. The moisture content is correct if it is just below the first knuckle.
- If you really want to use sticky rice in your recipe, but can't find it, try looking at a traditional market. Not all grocery stores have sticky rice.
- Glutinous rice is sometimes labeled “sweet rice,” or “gluten rice.”
