Oven Roasted Chickpeas

- 2 tablespoons coconut oil or olive oil
- teaspoon turmeric powder
- teaspoon cumin
- teaspoon smoked paprika
- Salt and pepper to add taste
Step
Method 1 of 2: Frying Pan Roasted Chickpeas
Step 1. Wash the chickpeas
If you are using canned chickpeas, open the can, drain the chickpeas and wash them thoroughly. Washing the chickpeas will remove the taste of the canned water, freshen it up, and enhance the flavor of your final dish. The easiest way to wash them is to pour chickpeas into a bowl with holes and wash them under cold water until they don't foam.
If you're cooking chickpeas yourself from scratch, you'll need to soak them overnight to make them soft enough to cook. Once soaked, drain the water, add fresh water, and cook the chickpeas in slow simmering water until soft enough to pierce with a fork. Drain the water and rinse the chickpeas – now they are ready to use
Step 2. Dry the chickpeas
Use paper towels to dry the chickpeas completely until they are ready to cook. This will ensure that the chickpeas remain nice and crunchy when roasted, and not soft.
Step 3. Heat the oil
Pour coconut oil or olive oil into a skillet and heat over medium heat. Heat the pan completely.
Step 4. Add chickpeas
Pour chickpeas into a frying pan with oil. Use a wooden spoon to stir until the chickpeas are coated in oil.
Step 5. Add the spices
Combine the turmeric, cumin, smoked paprika, in a bowl until thoroughly combined, then pour the spice mixture over the chickpeas. Toss the chickpeas until they are coated in the spices.
Step 6. Reduce the heat and cook the chickpeas until brown
Reduce the heat to medium-low and let the chickpeas cook slowly on one side. After 5 minutes, stir the chickpeas until they are still cooking. Continue to stir the chickpeas every 5 minutes until they are completely browned and crispy. This takes 15-20 minutes.
Step 7. Season with salt and pepper
Pour chickpeas into a bowl and season with salt and pepper for added flavor. Serve this quick and delicious meal to friends or add it to a salad.
Method 2 of 2: Oven Roasted Chickpeas
Step 1. Preheat the oven to 191 degrees Celsius
Step 2. Line a medium-sized baking sheet with aluminum foil

If cooking dry chickpeas, soak them overnight to soften them. After soaking, drain the water, add fresh water, and cook the chickpeas in slow boiling water until soft. Drain the water and rinse the chickpeas – now they are ready to use
Step 4. Dry the chickpeas
Use paper towels to dry the chickpeas completely until they are ready to cook. This will ensure that the chickpeas stay nice and crunchy when roasted, and not soft.
Step 5. Coat the chickpeas with oil and spices
Toss the chickpeas in a bowl with the oil, turmeric, cumin, and smoked paprika. (If you are using coconut oil, melt it first). Use a spoon to stir the ingredients until the chickpeas are completely coated with the spices.
Step 6. Spread the chickpeas on the roasting pan
Make sure the chickpeas are arranged in a single layer, so they cook evenly.
Step 7. Bake chickpeas for 30 minutes
After 15 minutes, stir in the chickpeas so that all sides are cooked through. Check to make sure it's not too brown; if this happens, reduce the heat to 163 degrees Celsius.
Step 8. Season the chickpeas with salt and pepper
When they are brown and crunchy, remove the chickpeas from the oven and pour into a bowl. Season with salt and pepper for added flavour. This delicious snack is now ready to be served. Roasted chickpeas are delicious warm or cold.
