Milanesa is a dish consisting of thinly sliced veal, beef or chicken that has been dipped in egg, breaded and seasoned with salt, parsley and garlic and topped with tomato and cheese. It is a popular dish in Argentina, Bolivia, Brazil, Chile, Colombia, Paraguay, Peru, Uruguay and Mexico. There are many different variations.
Step
Method 1 of 2: Standard Milanesa
Step 1. Gather all the ingredients
Here's what you need to make a standard Milanesa:
- 450-900 grams of beef, chicken or veal, cut into strips no more than 1.25 cm thick
- 2 eggs
- 3 tablespoons (45 g) milk
- 3 cups (600 g) breadcrumbs
- Salt and pepper (to taste)
- Garlic, parsley (to taste)
- Parmesan Cheese (to taste)
- Tomato, lemon and cheese of your choice (for garnish)
Step 2. In a small bowl, beat the eggs and milk to make an egg glaze
Lightly beat the eggs until the eggs are mixed with the milk.
Step 3. In a separate bowl, stir in the bread crumbs, Parmesan cheese, parsley, garlic, salt and pepper
Herein lies the originality of this recipe -- Milanesa can be onion, cheese, or spicy -- depending on your creation.
Step 4. Dip the bacon in the egg wash and coat with the crumb mixture
Cut the meat into 8 or more pieces, depending on how much you want to make. Cut meat will be quicker to cook and easier to eat.
Of course, tenderize the meat before frying it on the stove
Step 5. In a large skillet, heat 1/2" (1.25 cm) oil
Fry the beef over medium-high heat for 2-4 minutes until brown. Add as much meat as you want, but don't overcrowd. The meat should be cooked on both sides, and cooked until crisp and brown.
-
If you keep the meat warm in the oven at 250 °F (120 °C) while cooking the meat, it will all be ready to serve at the same time.
Step 6. Place the meat on paper towels and transfer to a baking sheet
If there is still meat to fry, transfer the meat to the oven. But when you're done, transfer it to a plate to serve. Once transferred, cover the meat with the tomatoes and cheese (sliced or grated).
-
If the meat is not hot enough, place it in the grill about 4 from the heat for 1-2 minutes or until the cheese is melted.
-
Garnish with lemon wedges.

If not on the stove, grill the meat in the oven on low and sprinkle with mozzarella cheese. Bake until melted
Step 5. Serve
In addition to mozzarella garnish, you can serve it with white rice. French fries, salads, mashed potatoes and greens can also be used. You can also cover the dish with a lemon or lime wedge.
