Typical Italian meatballs are a great addition to a variety of foods. Many of the recipes can be found so that it is often difficult for people to find a suitable recipe. Here's a classic Italian meatball recipe that can also be used to make Cormier's signature meatloaf with a simple change to the way the meat is formed before grilling.
Ingredients
- 0.5 kg ground beef
- 1 egg
- 80 ml milk or cream
- 45 grams of breadcrumbs (unsalted or Italian)
- 1 small chopped onion or 1 teaspoon garlic powder
- 1 tablespoon minced garlic or 1 teaspoon garlic powder
- 2 tablespoons butter
- 20 grams Romano or Parmesan cheese
- Olive oil or cooking spray
- Oregano or Italian spices (depending on taste, about 1 teaspoon)
- Salt and pepper (depending on taste)
- 160 ml ketchup (for Cormier's signature meatloaf option)

Method 1 of 2: Making Meatballs
Step 1. Preheat the oven
Turn on the oven and set the temperature to 190 degrees Celsius.
Step 2. Prepare the breadcrumbs
In a small bowl, combine the milk and breadcrumbs. Allow the mixture to fully absorb the milk, which usually takes about 5 minutes.
Step 3. Sauté the onions and garlic
Using a skillet, heat the olive oil. Then, add the onions and garlic. Keep stirring until the onions are slightly brown.
Or, you can replace it by adding onion powder and garlic
Step 4. Add the rest of the ingredients to the breadcrumb mixture
Combine breadcrumbs, onions, garlic, meat, salt, pepper, oregano or Italian seasonings, cheese, and eggs in a bowl and mix well.
Step 5. Form the meatballs
Form the dough mixture into meatballs about 4 cm thick. The dough should be the size of your palm so that you can form it into a ball with both hands.
Step 6. Prepare the pan
Grease a baking sheet with olive oil or cooking spray. Make sure to grease the edges of the pan. Place the meatballs on the baking sheet at a distance of about 2.5 cm from each other.
Step 7. Bake the meatballs
Place the baking sheet containing the meatballs in the oven for 20-30 minutes. Bake the meatballs until they are brown and slightly crunchy in texture.
Step 8. Check the doneness of the meat
If you have a special thermometer for meat, insert it into the center of the meat. The temperature of the cooked meat should reach 71 degrees Celsius.
Method 2 of 2: Making Cormier Meatloaf
Step 1. Preheat the oven

Grease the casserole container with olive oil or cooking spray then pour 80 ml of tomato sauce on the sides and bottom of the container. Pour the meatloaf mixture into the bowl and smooth the top.
Step 6. Bake the meatloaf
Place the meatloaf in the oven for 45-60 minutes. Bake until the meatloaf is lightly browned and has a slightly crunchy texture.
Step 7. Check the doneness of the meat
If you have a special thermometer for meat, insert it into the center of the meat. The temperature of the cooked meat should reach 71 degrees Celsius.
Tips
- If you don't want to wait for the oven to heat up, you can cook the meatballs by frying them in a frying pan. In one cooking process, fry 4-5 meatballs.
- Add some spices such as red chili or cayenne pepper.
- Use a melon baller or small ice cream scoop to make the meatballs the same size.
- The ground beef in this recipe can also be replaced with ground chicken.
