Rasam soup has an important role in south Indian dishes. A wide variety of rasam soups are available in the states of south India. That said, this soup is good for digestion because its main ingredients have medicinal properties.
Ingredients
- Sour fruit the size of a medium gooseberry
- 1 medium sized tomato
- 1 tablespoon pepper
- 1 tablespoon cumin
- 3 medium red chilies
- 4 cloves garlic
- A pinch of turmeric powder
- 2 teaspoons oil
- 1 teaspoon mustard
- 1 stick curry leaf
- 3 stalks of coriander leaves
- Salt to taste
Step
Step 1. Soak the tamarind in a bowl of one and a half cups of water and add turmeric powder and a pinch of salt
Step 2. Squeeze and strain the tamarind water then set aside
Step 3. Squeeze the tomatoes and add them to the sour water
Step 4. Grind the pepper, cumin, garlic and one red chili to a dry powder
Step 5. In a frying pan, add oil and heat, then add mustard and once it breaks, add two chilies, then curry leaves
Step 6. Add the previously prepared tamarind water
Step 7. Add the ground ingredients and salt to taste
Step 8. Bring to a slow boil
Step 9. As soon as you see the foam, turn it off
If you don't turn it off immediately, the taste will be bitter.
