Try this zucchini recipe on a hot summer evening when you're not in the mood to spend a lot of time in the kitchen. This is a very simple dish that highlights the fresh, subtle flavors of zucchini. Serve as a side dish with any type of meat or fish.
Step 1. Preheat the oven to 450 degrees
Roasting zucchini at high temperatures will cause the flesh to caramelize and turn golden brown, making the dish more flavorful.
Step 2. Wash the zucchini
Remove any dirt and soil that may still be on the zucchini skin. Use a vegetable scrubber or brush if necessary to make sure it's completely clean.
Step 3. Cut the zucchini
Place the zucchini on a cutting board and use a sharp knife to cut it in half lengthwise. Twist each half of the zucchini and use a knife to cut them into 2.5 cm thick slices. Repeat the process for the remaining whole zucchini.
- When baking zucchini, you don't need to peel the skin. The skin will soften as it bakes, so there's no need to throw it away.
- If you wish, you can roast the zucchini freshly halved without thinning it again, or cut it into long strips or strips like pickled dill. Cut it into any shape you like.
Step 4. Mix the spices
Place the dry Italian seasoning, pepper, and salt in a bowl and mix together.
Step 5. Toss the zucchini in the olive oil
Place the zucchini pieces in a bowl and pour the olive oil over them, then use tongs to flip them over until all sides of the zucchini are evenly coated with the oil.
Step 6. Season the zucchini
Add the garlic to the bowl. Pour the seasoning mixture over the zucchini, then toss again to coat with the seasonings.
Step 7. Arrange the zucchini on the baking sheet
Make sure the zucchini pieces don't overlap - the zucchini should be laid out in a single layer so that they bake evenly.

Method 3 of 3: Crispy Baked Zucchini in Breadcrumbs
This snack is healthy because it looks like fried but is never really fried in a lot of oil. In this way, the zucchini will be toasted in a layer of the breadcrumbs, butter, and egg mixture. It can be a delicious appetizer for any dish, and is especially good when paired with Italian favorites such as ravioli and lasagna.
Step 1. Preheat the oven to 450 degrees
