Step
Method 1 of 4: Peel and Remove Shrimp Center Veins
Step 1. Peel the prawns
Shrimp should be in cold or ice water when you peel them. To peel the shrimp, if the head is still attached, pull the head with the legs. Start with the tip of the head and pull the outer skin off. You can decide whether you want to leave the skin on for serving, or you want to peel it too to make it easier to eat.
-
Place the skin in a plastic bag and seal the lid to remove it.
-
If you want to use the skins to make broth later, seal them in a plastic bag and store them in your freezer.
-
You can leave the shells unpeeled to retain some of the flavour, although this can make the shrimp a little tougher to eat. If you want to do this, you'll need to trim the outer edge of the back of the shrimp with kitchen shears, so you can remove the central vein easily.
Step 2. Remove the shrimp's central vein
You should always remove the veins from the shrimp before you cook them. To do this, take a small knife and cut along the outer edge of the back of the shrimp. Cut at least 1⁄4 inch (0.6 cm) back, just enough to reach the vein, which is dark green in color which contrasts with the paleness of the shrimp.
If you can see the vein, pull it out with your fingers or with the tip of a knife. If you can't see the veins, switch to another shrimp
Step 3. Place the prawns in a bowl of cold water or ice water until you cook them
Don't leave the shrimp in the kitchen while you prepare the rest of the recipe.

Step 6. Boil for 2-3 minutes
Turn up the heat to high and let the wine simmer until the prawns absorb it.
