Part 1 of 2: Making Substitutes
Step 1. Measure and measure the ingredients properly
Each ingredient has different characteristics, so make sure that you know the right type of chocolate ingredient for your recipe. For the record, bitter sweet chocolate (sweet mixed with bitter) and semi-sweet can replace each other. Both are more or less the same, but only different names.
- If you're making a chocolate chip substitute, you might have a hard time. It won't feel like exactly what you'd expect, but it's technically possible to do it. Step 2. Try a substitute for unsweetened chocolate
Mix 3 tablespoons cocoa powder with 1 tablespoon shortening (butter, margarine or vegetable oil). Stir until completely mixed. The result is the equivalent of 28 grams (1 oz) of unsweetened chocolate.
It is a substitute for unsweetened chocolate ingredients. If you use sweetened cocoa, it won't taste the same, but it will be much sweeter
Step 3. You can also try making a substitute for semi-sweet chocolate
Mix 1 tbsp cocoa powder, 3 tsp sugar, and 2 tsp shortening, then stir until combined. This mixture will yield 28 grams (1 oz) of semi-sweet chocolate. You can try this ingredient in place of the chocolate chips on your cake, but it will taste more like a chocolate chip cookie without the chocolate chips.
This mixture can also be used to replace bittersweet chocolate
Step 4. Alternatively, use cocoa instead of sweet chocolate
Mix 4 tsp sugar, 3 tbsp cocoa, and 1 tbsp vegetable shortening. This will yield 28 grams (1 oz) of sweet chocolate substitute after stirring until combined.
Again, you should always be wary of using this mixture in place of chipped chocolate, as it doesn't come in flakes
Step 5. Mix with the liquid ingredients already in the recipe
If you're not sure how to mix the cocoa, sugar and shortening mixture, just put the mixture in the bowl that already contains the liquid ingredients in the recipe. Everything will mix by itself.
This mixture can also be drizzled over cakes or other dishes in the recipe, then baked in the oven. However, this mixture is not suitable for use as a dipping sauce
Part 2 of 2: Using Cocoa in Recipes
Step 1. Make chocolate ganache

If you're not sure that the chocolate ingredient in the main recipe can be substituted for cocoa, why not give it a try with the toppings? That way, the dessert itself won't be wasted if the topping isn't perfect. After all, chocolate whipped cream can't possibly go bad, with or without cocoa.
