Tortilla chips are the perfect snack - light and crunchy and not too filling. Most people buy tortilla chips in stores, but you can make your own at home. The process is very easy.
Ingredients
- Corn or flour tortillas
- Non-stick spray or vegetable oil
- Salt
Step
Method 1 of 3: Baking in the Oven
Step 1. Preheat the oven to 177°C
Step 2. Grease a baking sheet with vegetable oil
Just thin. This will ensure that the chips don't stick to the pan.
Step 3. Brush the unfinished tortilla with vegetable oil such as grapeseed or canola oil
Using the same brush you used to brush the pan, brush the tortillas with neutral cooking oil. If you want to smear both sides just do it. There is also another, faster method of greasing the oil:
-
Brush only one side of the tortilla with oil. Place the oiled tortilla side up. Oil one side of the other tortilla and place on top of the previous tortilla, oil side up. Continue to apply oil and stack on top. The oil will hit the non-oiled side of the tortilla. This will result in a perfectly greasy pile of tortillas: both sides are greased but not submerged in oil. Your tortilla chips will be crunchy but slightly chewy.
Step 4. Cut the stack of tortillas into triangles
If you have a shape of your own choice, just shape it. Bring out your creativity. If not, usually the tortilla chips are cut into triangles or squares. Here's how to do it:
-
Triangle: Cut two round tortillas into two semicircles. Cut two more, both. Then cut in half again.
-
Squares. Trim the curved edges of the tortilla. This will produce a square shape. Make two equal length cuts, then cut them perpendicularly. The result is four squares.
Step 5. Put the tortilla chips apart and not piling on the baking sheet, sprinkle with salt
If possible, place the non-greasy side down so that it touches the grease on the pan.
Step 6. Bake the tortillas for 8 to 12 minutes see after 8 minutes
Tortillas are done when the edges are slightly raised and crisp. The center may be a little soft, but it will be crunchy once it cools down.
Step 7. Let it cool for a few minutes and serve immediately
Method 2 of 3: Frying in the Frying Pan
Step 1. Fill a large skillet with 2.5 to 5 cm of oil
Use a neutral oil such as vegetable, grapeseed or canola oil.
Step 2. Heat the oil in a frying pan until it reaches 163°C
Oil heated below 163°C will not brown or burn tortillas. While frying tortilla chips at 163°C will take a long time, it will produce a consistent product.
-
If you want to heat the oil to 177°C or higher, the tortillas will cook faster, but be careful not to burn them. If you decide to cook at 177°C, check for doneness in 45 seconds to one minute.
-
If you don't have a thermometer to check the temperature of the oil, use the tip of a wooden spoon. Dip the handle of a wooden spoon into the water. When bubbles start to form, your oil is hot enough.
Step 3. Slightly fry the tortillas at 163°C for 3 minutes
No need to stir or turn over a lot.
Step 4. With a sieve spoon, remove the tortilla from the oil and place it on a thick paper towel
Step 5. Immediately sprinkle with salt
Sprinkling salt is best when freshly removed because the oil on the tortilla chips will bind to the salt.
Step 6. Serve immediately
When not serving, store in an airtight container. Homemade tortilla chips go stale if not stored properly.
Method 3 of 3: Cooking in the Microwave
Step 1. Cut the tortillas into squares or triangles and place them on a microwave-safe plate
Spread the tortillas so there is some space.
Step 2. Cook the tortillas in the microwave on high for about a minute
At this point, the tortillas are still a bit mushy and still need processing.
Step 3. Turn each tortilla over and place on the same microwave-safe plate
Step 4. Cook the tortillas again in the microwave for another minute
Watch the edges so they don't burn. Check again. This will depend on your microwave, but usually the tortillas are cooked by now.
Step 5. Turn it over again, and put it in the microwave for 30 seconds to 1 minute
Keep an eye on it because if it takes too long it can burn.
Step 6. When it is cooked, remove it from the microwave
If desired, brush with neutral oil and sprinkle with salt.
