Method 1 of 2: Gathering the Essence
Step 1. Be aware that pork gravy is made from the juice of cooked pork
In order to collect the juices to make the gravy, you must first cook the meat. This can be done in one of the two ways below:
- Roasting pork: choose a cutlet and place in an ovenproof dish or pan with the fat side down. Preheat the oven to 204°C. After that, put the plate and pork in the oven. Bake the meat for 30 minutes then flip it over so that the pork is with the fat side facing up. Turning the pork over makes the whole piece roast evenly. Remove the pork and let it rest for 10 minutes.
- Saute: season your pork chops with salt and pepper on both sides. Heat the butter in a skillet or large saucepan over medium-high heat. If you wish, you can use olive oil instead of butter. Place the pork chops in a skillet and cook until they are brown on both sides and fully cooked. This process will take three to five minutes. The pork is done cooking when it is white on the inside.
Step 2. Collect the cooked pork curd
When removing the meat from the skillet or pan, hold it over it for a few seconds. By doing this, the extra juice will drip off the meat and into the pan.
Step 3. Pour the juice from the pot or skillet into a measuring cup
The measuring cup lets you see when the oil separates from the juice. Leave this juice in the box until the oil floats to the top.
If you don't have a measuring cup, you can use a saucepan
Step 4. Remove the lard from the top when it has separated from the juice
Put the fat in a small saucepan on the stove. You will need about 3 tablespoons of fat from the pork gravy.
Method 2 of 2: Making the Beef Stew
Step 1. Put the fat on the stove
You should prepare three tablespoons of fat. Place the pot of fat on the stove. Add three tablespoons of flour to the fat and stir.
Step 2. Cook flour and oil over medium heat
You should cook this mixture for one to two minutes, stirring frequently. Make sure you scrape the brown from the bottom and sides of the pan.
Step 3. Add the ingredients to the beef juice
You will need two cups of the cider mixture. Measure out how much juice you have, then pour it into a mixing bowl. Add liquid to taste so that you have two cups of beef juice.
- Add pork stock to the beef broth mixture for an authentic, salty taste.
- Add sherry or red wine for a more delicious gravy. The gravy will go well with a bit of sourness. Wine or sherry add flavor to the gravy because of its acidic element.
- Some people like to make a gravy by mixing beef juice with a can of creamy mushroom soup.
Step 4. Add the de cider mixture in the flour and fat mixture
Stir both mixtures in a skillet over medium heat. The gravy should be soft and thickened. Add salt and pepper to taste.
If it's not thickened to your liking, add another tablespoon of flour
