Spring rolls are a favorite in many Vietnamese, Thai and Chinese restaurants. This dish is most delicious when dipped in a regular sweet and sour sauce. Spring rolls can be enjoyed at home, with minimum effort and can be eaten anytime and for any meal or occasion. Learn how to fold spring rolls properly and the rest will be easy. Method 1 of 2: Using the Burrito Method
Step 1. Spread the wrapper evenly
If you are using a round dough, then you can lay the wrapper any way you like. If your dough is square, then lay it out like a diamond.
Step 2. Make the egg mixture
Crack a raw egg and place the contents in a small bowl and beat with a fork until thoroughly combined. This will help make the mixture that wraps the spring rolls together. After you cook the spring rolls, they will be safe to eat. If you're using rice paper or other wrapping that you don't plan on cooking, then you shouldn't use the egg mixture to secure the wrapper as the eggs will still be raw.
Step 3. Dip a cake brush into the egg mixture and use the brush to smear the two opposite sides of the wrapper (top and bottom)
This will help the wrapping parts stick together when the time comes.
Step 4. Put the contents into the roll
Place the filling on top of the wrapper close to the bottom and spread it out in a line. This line should be about to 2/3 inch long. Make sure this line doesn't overflow out of the wrapper. You should leave enough space on each side of the wrapper so you can fold the wrap comfortably without removing the filling.
Step 5. Fold the left and right sides of the wrapper over the mixture
Just fold it until these two here are touching, or nearly touching each other, over the filling.
Some people like to fold the top and bottom of the wrapper first, then slip the sides over the two halves of the wrapper before they roll it up
Step 6. Fold the bottom of the package over the filling
Be careful when tucking it under the front side of the mixture, the side away from you.
Step 7. Continue folding the rolls
When the blend lines are out of sight because they are under the wrapper, fold the edges that are close to the finish line. Hold it as you continue to fold it. Make sure you fold it by hand in the middle of the blend line.
Step 8. When the folds on the sides are covered on the sides, roll up the wrap
Your spring rolls are now ready to cook!
Step 9. If the last corner doesn't fold, spread the egg mixture over it and stick it to the rest of the roll
This method will definitely work.
Step 10. Continue the rolling method for the rest of your spring rolls
You can make as many as you like, or just make one for yourself.
Step 11. Fry until golden brown
Just 2-3 minutes on each side is enough. Put some oil in a skillet and fry the spring rolls over medium heat. Let stand one minute until cool and the spring rolls are ready to be enjoyed.
Method 2 of 2: Using the Envelope Method
Step 1. Place your wrapper on a plate in a diamond shape
If you are using rice paper, which is traditionally used in many spring rolls, then you should read the instructions on how to prepare it. You may need to put it in hot water for 15 seconds to get it ready to use. Each corner of the four sides should point outward, so you'll be forming a diamond, not a square.
Keep in mind that, unlike in the first method, you can't use egg paste to help stick the rolls together because the wrapper is already cooked. You shouldn't put raw eggs on top if you don't plan on cooking them
Step 2. Place the contents in the lower center of the wrapper horizontally
Now, spoon the filling so that it is horizontal from the left corner to the right corner. This will keep the stuffing from coming off the sides. You shouldn't set it too high – only about an inch (2.5 cm) maximum – so you have plenty of room to fold the wrapper over the filling.
Step 3. Fold the bottom corner over the filling
Now, take the bottom corner and fold it over the filling, so the bottom corner is now facing the same direction as the top corner. About an inch (2.5 cm) of corner should be folded over to the top of the filling, so there is still 2-3 inches (5-7.5 cm) between the bottom corner and the top corner.
Step 4. Consider tucking or rolling the bottom corner over the filling (optional)
Some people like to tuck the top corner into the filling so this corner will disappear into the ingredients. Some people even roll it over the ingredients in a full rotation, to secure its position there. Others prefer to take the traditional route and keep the corners folded up – it's all up to you.
Step 5. Fold the left corner to the center of the roll
Fold the corners up so they are facing the opposite direction in the roll. The result will start to look like an envelope.
Step 6. Fold the right corner over the center of the roll until it meets the left corner
Now, just do as you have done for the left corner. The right and left corners should just touch. Now, you are almost done making the envelope. By now, these spring rolls should look like envelopes with the filling inside and the lid facing up.
Step 7. Roll the bottom until you are done rolling the spring rolls
Now, roll the bottom up until you have fully rolled the spring rolls using the envelope method. Now, all you have to do is sit back and enjoy your meal.
Tips
- Take your time and take it easy. The result will be worth it.
- Be gentle with the wrapper. The wrapper is very thin and soft.
