A latticed pie crust can make you look like a great baker. However, making pie dough ribbons can be easier than you think. With a gentle touch and careful placement, the latticed pie crust will make the cake a work of art that also tastes delicious.

Part 1 of 3: Making the Dough
Step 1. Purchase ready-made pie crusts at your local convenience store if you don't have enough time to make the dough at home
Buy pie crusts in circles or sheets so they can be ground, instead of buying them already packaged in an aluminum foil pie pan.
Step 2. Choose to make pie crusts from scratch at home
Remember to make twice the recipe if you are only making the base of the crust 30.5 cm in diameter.
Step 3. Measure the width of the pie plate with a measuring tape
The dough should be rolled out at least as wide as a pie plate when the ribbon is cut.
Step 4. Divide the dough into two equal parts
Grind the first part until it is 30.5 cm in diameter. Place on a pie plate and make sure the dough passes over the edge of the ceramic or glass.
Dough that is cooled briefly in the refrigerator will be easier to grind and cut into pieces
Part 2 of 3: Cutting the Ribbon
Step 1. Roll out the second part of the dough into a rectangle
Roll out the dough on parchment paper (parchment paper) so that it can be lifted easily. Aim until it reaches 0.5 cm thick.
- Using a rectangle of dough instead of a circle will allow you to make the entire ribbon long enough to span the diameter of the pie. The excess part can be cut off after the ribbon is woven.
- Be sure to dust the parchment paper with flour first before rolling out the dough using a rolling pin.
Step 2. Wash the plastic ruler
A plastic ruler can be used to help make the ribbon straight. Place a ruler in the center of the shorter side of the rectangular pie dough.
Step 3. Decide if you want the dough to be cut into 2 cm or 1 cm widths
The smaller the size, the more ribbons you can make and the tighter the grid will be. Try starting with a larger ribbon on your first pie grid.
Step 4. Make small slits every 1 to 2 cm across the entire width of the rectangular pie dough
Use a paring knife. Continue until you reach the other side.
Step 5. Rotate the ruler to 90 degrees, then adjust to the first gap
Cut along the long sides of the dough and the edge of the ruler using a pie dough cutting tool or wheel.
The fluted pie dough cutting wheel will create a wavy ribbon on the pie grid
Step 6. Adjust the ruler again with each gap
Repeat this method until all of the pie dough has been cut into a ribbon.
Step 7. Carefully lift the parchment paper onto the baking sheet
Place in the refrigerator while you fill the pie crust. Shortly cooled pie strips will make it easier to knit.
- Try to make a mound in the middle when filling the pie crust. The pie filling will be evenly distributed as it bakes, and this will keep the griddle braid in the center from falling off.
- Now is a good time to preheat the oven according to the pie recipe.
Part 3 of 3: Weaving a Pie Grid
Step 1. Remove the griddle tape from the refrigerator
Place it next to the filled pie.
Step 2. Arrange the ribbon stretched over the pie horizontally
Lay the tapes parallel to each other at a distance of 0.5 to 2 cm. The smaller the distance between the ribbons, the more effort will have to be made to weave the pie.
It is very important to give the appropriate distance between the ribbons from each other. For example, if you choose to arrange the ribbons close together by a distance of 0.5 cm, the vertical and horizontal stripes must also be 0.5 cm apart
Step 3. Work one side at a time
Fold the other ribbon over until the edge of the dough reaches the left side. Take another ribbon and place it lengthwise (vertical) in the middle of the pie.
Step 4. Spread the strip of dough again over the strip in the middle
You have started weaving the dough.
Step 5. Refold the other ribbon using the strip stretched last time
This time the bands will simply be folded back until they are overlapped by the parallel bands that have just been stretched. Place another band of dough to the right of the previous one.
- Make sure all ribbons are evenly spaced..
- Unfold the ribbon and lay it flat.
Step 6. Repeat the step of folding the ribbon in half, placing the dough ribbon vertically stretched over the pie, then unfolding the ribbon until it reaches the right end of the pie
Step 7. Rotate the pie 180 degrees and repeat the above steps on the unwoven side
When you're finished knitting the grid, the dough band will go around the entire top of the pie edge.
Step 8. Pinch the dough at the point where the bottom crust connects to the end of the griddle using your thumb and forefinger
Press into a small “v” shape to make the edges crease and repeat all around the pie.
Step 9. Cut along the outer edge of the pie plate using a pastry cutter or pizza cutter
Step 10. Mix one egg with 1 tbsp (15 ml) milk and a pinch of sugar (optional)
Brush the surface of the pie with egg wash. Bake according to recipe directions.
