Step 1. Prepare the escalopes
Remove the skin and tendons from the chicken. Place the chicken fillet between two sheets of plastic food wrap or parchment paper and flatten it with a rolling pin. The goal is to evenly distribute it about 1cm thick. These flat pieces are known as escalopes.
Step 2. Dice bread
Add the diced bread slices to the food processor and it will be processed into breadcrumbs. Pour into a flat plate, wide bowl or dish for serving.
Step 3. Season the escalopes with salt and pepper to taste
Brush each escalope with mustard and sprinkle the top with freshly chopped herbs.
Step 4. Dip each escalope in the beaten egg
Make sure to coat both halves evenly.
Step 5. Dip in breadcrumbs then remove
The layers are tried to be covered all by breadcrumbs.
Step 6. Heat the oil in a frying pan
Add about 1cm of oil to the pan.
Step 7. Add the coated escalopes

Step 7. Add the chicken pieces
Fry for about 10 minutes. Turn occasionally during frying time. The amount of time it takes to cook depends on the thickness of the chicken; a golden brown color indicates that the chicken is cooked.

Method 6 of 6: Keeping the fried chicken warm
Based on all the suggestions recommended in sharing the fried chicken variants above, it is recommended that you only fry them for a short period of time, to ensure the best results. As such, this means you'll have to do the deep frying in a container and you'll have to keep some of the fried chicken pieces warm for a while. Here's one guaranteed method of keeping fried chicken warm:
Step 1. Put some water in a container in the oven, make some aluminum foil into balls
Step 2. Make the aluminum foil balls big enough to cover all the fried chicken
Step 3. Cover everything in the oven at 150-200ºF / 65-95ºC
Now you have made your own homemade chicken container.
Step 4. Store the chicken in the oven until it is ready to eat
When removed it will be really soft.
Suggestion
- If you are frying a lot of chicken, it is recommended to do this in small containers so that you have good control of the cooking temperature and the length of time it cooks. The chicken pieces can be kept warm on the plate in the oven if needed.
- For crispier fried chicken, do not combine flour and breadcrumbs. Instead, dredge the chicken pieces in flour, coating with a little flour (this will prevent the breadcrumbs from falling off). Then dip into the egg/milk mixture, then into the breadcrumbs. Wrap well in breadcrumbs, then place into the skillet. Follow the cooking instructions above, cooking to 165ºF / 73ºC for thighs and legs, 160ºF / 71ºC for breasts and wings. Start with the thighs, then add the legs, chest, and wings.
- When frying chicken, choose an oil that works well at high temperatures. The oil must have a fairly high flash point (the point at which it begins to ignite and change color). Good choices include peanut, sunflower and some other vegetable oils.
- Cook the chicken thoroughly. To ensure safety, chicken should be thoroughly cooked. It is important to observe the cooking time or indicators described in the recipe, to ensure both maximum taste and food is safe for consumption.
- If you are frying in a bowl or pan, change the oil in each container to remove any fallen breadcrumbs or they will look scorched.
- If you want the chicken to be crispy and well cooked, set the stove to low heat; will cook the inside of the chicken.
-
For an easier method of preparing chicken, combine all dry ingredients in a large plastic bag. Add chicken pieces a few at a time, and beat evenly on each piece. When coated, place on a plate, and add more chicken to the bag. Repeat until all pieces are coated. Then dip it in the liquid and fry it.
Attention
- Watch the oil so it doesn't get too hot; if the oil is too hot there is a risk of burning the food or cooking only the outside.
- Make sure the chicken is not pink; Raw or improperly cooked chicken can have diseases like salmonella and can also cause food poisoning. Make sure to cook until white.
- Use tongs to place the chicken into the batter and lift from the pan.
- Use hot oil with care. Handle with care and keep children and pets away when frying. Keep your face away from oil, oil can spit out suddenly and will cause burns if it comes in contact with skin and eyes.
- When processing chicken, avoid burning it with gloves.
