Chicken fried rice is a popular dish in Chinese restaurants in many countries. Chicken fried rice is a great recipe to make at home, as you can use leftovers, such as cold rice, eggs, chicken pieces, and fresh or frozen vegetables to make it. Follow this guide to make chicken fried rice.

Part 1 of 5: Making Rice
Step 1. Use the remaining 600 grams of white rice
For this fried rice recipe, you can directly use rice that is removed from the refrigerator.

If you don't have leftover rice, bring 2 cups (473 ml) of water to a boil. Add 370 grams of rice. Cover the pot, then turn it on at low heat. Let the rice simmer for 20 minutes. Check the rice as it approaches cooking to make sure it doesn't stick. Place the pot on the cool stove for 5 minutes, then stir the rice with a fork. Transfer the rice to a toaster tray to cool to room temperature.

You can also use a rice cooker to do this quickly. When you're done cooking, transfer the rice to the toaster tray, then place the tray in the pantry or refrigerator to cool the rice.
Part 2 of 5: Cooking Chicken
Step 1. Cut the boneless chicken breast into small pieces
Season the beef pieces with salt and pepper.
Step 2. Pour 2 to 3 tablespoons (30 to 44 ml) of vegetable oil into a frying pan or wok
Turn on the stove on medium to high heat. Stir the vegetable oil so that it spreads evenly on the bottom of the pan.
Step 3. Put the chicken in the pan
Saute chicken until fully cooked. Remove the chicken from the pan using a slotted spoon.
Step 4. Cover the bowl that holds the chicken to keep it hot
Part 3 of 5: Cooking Vegetables
Step 1. Cut 1 onion and 2 cloves of garlic into cubes
Step 2. Remove the frozen peas and carrots from the freezer
Step 3. Add 1 tablespoon (15 ml) of vegetable oil, if the pan is no longer coated with oil

You can use fresh peas and carrots if you like. Make sure that you have cut the carrots into cubes beforehand.
Step 4. Place the frozen onions, frozen peas and carrots in a hot frying pan
Stir the ingredients with a wooden spoon for 2 minutes, until the texture becomes smooth.
Step 5. Add the diced garlic for the last minute or 30 seconds
Part 4 of 5: Inserting the Egg
Step 1. Beat 3 large eggs in a bowl
Step 2. Make room in the pan to fry the eggs
Add a few drops of vegetable oil if the pan looks dry.
Step 3. Add the eggs
Stir the eggs with a wooden spoon as they fry. Toss the eggs evenly with the vegetables when they are almost cooked.
Part 5 of 5: Frying Rice
Step 1. Add vegetable oil to the pan, if the remaining oil in the pan is not enough to coat the rice
The amount of oil you add depends on how greasy you want the chicken fried rice to be.
Step 2. Add the cooled rice to the pan
Step 3. Add the cooled chicken
Step 4. Add 1/4 cup (59 ml) of soy sauce to the skillet or wok
Step 5. Stir well while frying and mix all the ingredients you are cooking
Step 6. Fry the rice until no liquid remains in the pan and the rice is golden brown
Step 7. Add the scallion garnish
Serve immediately.
