Method 1 of 1: Preparing the Chicken Wings to Be Processed
Step 1. Buy chicken wings to be processed
Provide 10-15 chicken wings for each main course or 5-7 chicken wings for appetizers. In this guide, 1 kg of chicken wings will make 4 servings. However, feel free to increase or decrease the portion to meet the wishes of your guests.
Step 2. Soften the chicken wings first
If you bought chicken wings frozen, soften them first. You can soften the chicken wings by refrigerating them overnight or by soaking them in a bowl of cold water for 4 hours.
Step 3. Cut the chicken wings to be processed
If the chicken wings are no longer frozen, cut the chicken wings at each joint using large scissors or a sharp kitchen knife. Cut into three parts. Cut off the tip of the wing.
- Make sure you process it clean. When you process raw chicken, you must process it clean. Wash your hands after processing the meat. Wash knives and cookware thoroughly after use to avoid contamination. Do not allow a product (or any other type of food) to touch raw chicken or utensils that have been exposed to raw meat.

- Note: Do not give the same seasoning to your chicken wings. Do not use the same sauce seasoning as the sauce you used to marinate your chicken wings. If you want to use the same sauce, make sure you use a new one. You should not use sauce that has been used to season raw chicken.
Step 5. (Optional) Coat chicken wings with seasoning flour
This step is done depending on your taste whether you want to coat the chicken wings with seasoning flour or not. If you want to do it, here are 2 recipes for making seasoned flour that are often used.
- This recipe for “simple seasoned flour” makes enough for 1 kg of chicken wings: mix 2 cups all-purpose flour, 1 tsp salt, 2 tsp pepper, 1 tsp garlic powder in a large bowl. Transfer the marinated chicken wings to the seasoning flour. Make sure the chicken wings are completely coated with flour. Drain the chicken wings in a clean container.
- This recipe for buffalo seasoning flour is enough for 1 kg of chicken wings: mix 2 cups all-purpose flour, 1 tsp salt, 2 tsp peppercorns, 1 tsp garlic powder, 1 tsp paprika powder, 1 tsp chili powder in a large bowl. Transfer the marinated chicken wings to the seasoning flour. Make sure the chicken wings are completely coated with flour. Drain the chicken wings in a clean container.
- For optimal taste, let the chicken wings that have been coated in flour in the refrigerator for about 1-2 hours before cooking.
===Cooking Chicken Wings===
Step 1. Cook the seasoned chicken wings
You can grill or fry the chicken wings. Whichever way you do, make sure to cook at 74˚ C to make it safe for consumption. It is recommended to use a food thermometer to determine the temperature of the chicken meat.

How to fry chicken wings: Pour vegetable oil into a frying pan or pan. Heat the oil until it reaches 191˚ C. When the oil is hot, slowly and carefully add the chicken wings. Wear long sleeves so the hot oil doesn't hit your hands directly. Fry the chicken wings until brown. When they are brown, remove the chicken wings and drain.
Don't put too many chicken wings in the frying pan. While frying, the chicken wings should be able to move freely and be submerged in the oil. Therefore, you must divide it into 2 or more frying sessions
- How to bake chicken wings: preheat the oven to 191˚ C. Place the chicken wings in a baking dish. Bake for 10 minutes. Bake the other side for 15 minutes until lightly browned.
Step 2. Drain the cooked chicken wings
When the chicken wings are cooked, place the chicken wings on a plate lined with paper towels. Let the oil drip, but not for too long. Don't let the chicken wings get cold.
Step 3. Mix the sauce with the cooked chicken wings
After draining for a while, place the chicken wings in a large bowl. Add sauce and stir until all layers of chicken wings are coated with sauce.

- Health note: Do not use the sauce you have already used to marinate raw chicken. The sauce should be discarded. Use the new sauce that you separated earlier.
Step 4. Serve
Transfer the sauced chicken wings to a serving plate. Serve with celery, blue cheese sauce or other sauces.
