Making cotton candy in large quantities is almost impossible without using a special machine for making it. But you can make your own beautiful cotton candy from twisted or pulled sugar yarn, if you have a little patience, know how and some common cooking utensils.
Ingredients
Hand Round Curry
- 4 cups/800 grams sugar
- 1 cup/40 ml corn syrup
- 1 cup/40 ml water
- 1/4 tsp./1.5 g salt
- 1 tbsp/5 ml raspberry extract
- 2 drops pink food coloring
Hand Pulled Curry
- 4 1/3 cups sugar
- 2 cups of water
- 1 tbsp vinegar
- 1/2 cup corn syrup
- 1 drop food coloring (optional)
- Cornstarch
Step
Method 1 of 2: Hand Round Curry
Step 1. Combine sugar, corn syrup, water and salt in a large saucepan and cook over medium heat
Place 4 cups sugar, 1 cup corn syrup, 1 cup water, and 1/4 tablespoon salt in a saucepan and stir until the sugar melts. Use a pastry brush to clean the inside of the pan to prevent sugar crystals from forming.
Step 2. Use a candy thermometer and heat the dough to 160°C
Then pour the hot mixture into a container that is not too deep and heat-resistant. Then, add the extract and food coloring you used and then mix well. Although the recipe mentions raspberry extract and pink food coloring, you can use any flavored extract or any color coloring you want.
Step 3. Place the paper on your table
You can also place it on the floor so that the sugar that falls doesn't stick to the floor.
Step 4. Rotate the sugar
Dip the spoon into the sugar solution. Lift and hold over the pan, allowing the sugar to drip back into the pan for just a second. Hold it about 30 cm above the paper and swing it back and forth so that a very thin strand of sugar falls onto the paper. Repeat a few times until you get a bunch of rounds of sugar. Of course, you know that it will not look like the candy made from a cotton candy machine that you are used to seeing.
Step 5. Wrap the cotton candy on a lollipop stick
You have to do this straight away, otherwise the sugar will become brittle and warp when you spin it on the stick.
Step 6. Serve
This dish is best enjoyed straight away, but you can also store it in an airtight container to prevent the gum from getting wet.
Method 2 of 2: Hand Pulled Curry
Step 1. Put the ingredients in a medium saucepan
Place 4 1/3 cups sugar, 2 cups water, 1 tablespoon vinegar, 1/2 cup corn syrup and 1 drop food coloring in a saucepan. Stir gently to prevent sugar crystals from forming on the inner side of the pan.
Step 2. Boil the dough
Use a candy thermometer and watch it reach 131°C. Then, remove the pan from the stove and allow it to cool to 100°C.
Step 3. Divide the dough into four equal plastic containers
Step 4. Remove from container when it reaches room temperature
Do this by gently squeezing it while inverting the container.
Step 5. Sprinkle plenty of cornstarch on the baking sheet
Step 6. Roll the sugar mixture into the cornstarch
Remove if there is any left.
Step 7. Prepare the dough for pulling
Make a hole in the center of the dough. Use your thumb and forefinger to dig a hole in the center of the dough. Then pull until the circle is wider with the dough remaining the same thickness around the rope you made. When the string is long enough, twist it into a figure eight and find the two sides together.
Step 8. Pull out the dough
Hold the dough in two hands. Hold your hand in front while the other hand pulls slowly. Twist your hands around the dough and keep pulling until the strands are long enough. Keep pulling until at least 10-14 times.
Step 9. Serve
Enjoy this delicious curry while it's still in good shape.
Tips
- Prepare your kitchen before starting to cook. If the dough is too cold it will be difficult to create good strands.
- Cover the work area with wax paper, paper or newspaper for easy cleaning.
- Keep cold water near you (or work near the sink) in case something catches fire.
- Know that this is not candy like in the store. This curry is thick, soft and delicious.

- A few last-minute drops of essential oil can add flavor to your snack.
Warning
- Hot sugar can cause serious burns. Be careful. The temperature is the same as the oil used for frying, but unlike oil, the hot sugar won't escape your skin, but will seal and heat the skin until it cools down. This means you can get third-degree burns if you're not careful. Third-degree burns may require hospitalization and can be very painful.
- Remember to use an apron, making the cotton candy can be messy.
- Making cotton candy is easy but must be done properly. Temperatures just a few degrees above or below the strands may not form.
- Don't make circular gumballs by hand when children or pets are around you.
- Be careful when throwing a round of cotton candy because it can be dangerous. Negligence can cause a fire.
