Ready in minutes, egg fried rice is a staple dish that can be mixed with an unlimited number of ingredients and has a taste that never disappoints. This delicious dish has a simple recipe and can be used as a quick meal or a great snack.

Traditional Egg Fried Rice
- 1 egg
- 2 tsp sesame oil
- 2 tbsp vegetable oil
- 200 gr of pre-cooked long grain rice
- 110 gr peas and carrots
- 4 spring onions, finely chopped
- 2 tsp soy sauce

- 1 cup water
- 1/2 tsp salt
- 2 tbsp soy sauce
- 1 cup uncooked instant rice
- 1 tsp vegetable oil
- 1/2 red onion, finely chopped

Spicy Egg Fried Rice
- Cumin seeds
- 2 eggs
- 1/4 tsp salt
- 1 red onion, coarsely chopped
- 3 tbsp peanut oil
- 2 cloves garlic, finely chopped
- 1 tbsp celery, finely chopped
- 1 tsp soy sauce
- 1 tsp vinegar
- 1 tsp chili sauce
- 1 cup cooked brown or white rice

Method 1 of 3: Making Traditional Fried Rice
Step 1. Cook the rice beforehand
Cook the rice the day before, or use leftover rice stored in the refrigerator. The most important thing to remember is not to heat the rice, let the rice cool. Allowing the rice to cool helps it from sticking. Remove the rice from the refrigerator just before you start cooking.
Choose long grain rice to make egg fried rice. Jasmine, white, or whole-grain rice work well in this recipe. You can also use Basmati rice, but the taste of the rice will be masked by the other flavors
Step 2. Prepare the eggs
Before you start, beat the eggs and sesame oil together in a small bowl. Set aside temporarily.
Step 3. Saute the vegetables
Heat the oil in a frying pan until it starts to smoke. Pour in the peas, carrots and onions. Saute until the vegetables start to brown and are soft.
- Sautéing is a cooking method in which small pieces of food are rapidly cooked in small amounts of hot oil in a skillet over medium-high heat. Sautéing vegetables preserves their color, crunch, and nutrients. Cook until the vegetables are soft.
- All kinds of vegetables are suitable for use in fried rice. Try using tomatoes, broccoli, onions, bean sprouts, carrots, peas, red or yellow bell peppers, young corn, or scallions.
Step 4. Add rice
Pour the rice into the stir fry vegetables. Continue to sauté the rice and vegetable mixture for 3-4 minutes.
Step 5. Make scrambled eggs
Using a spatula, set the stir-fry mixture aside in the pan. Pour the eggs into the empty area of the pan and scramble the eggs using a spatula. While the eggs are cooking, mix them with the stir-fried rice and vegetables.
- An alternative way to scramble eggs is to set the rice and vegetables aside and pour the eggs into the skillet. Let the eggs rest for 10 seconds, then use chopsticks to stir the edges before using a spatula to stir into the entire mixture. Continue frying for a few minutes.
- To make a vegetarian fried rice recipe, you can simply replace eggs with fried tofu or other vegetable protein sources.
Step 6. Season the mixture
Pour the soy sauce over the mixture and stir until you are done frying. You can also add a little sesame oil. Transfer to a plate and serve.
Method 2 of 3: Making Simple Egg Fried Rice
Step 1. Cook the rice
Put the water, salt and soy sauce in a saucepan and let it boil. Add instant rice and stir. Remove from stove, cover, and let simmer for at least five minutes.
Step 2. Make scrambled eggs
Heat a skillet over high heat then add a tablespoon of oil. Swirl the oil around the pan to coat the bottom. Put the eggs in the pan and scramble them for a few minutes. Remove the eggs from the pan and place them on a plate. Wipe the pan.
The pan should be hot enough so that the water droplets can evaporate from the bottom
Step 3. Saute the vegetables
Heat a skillet over high heat and add a little oil. Add the green beans and onions to the skillet and sauté for 2-3 minutes, until the vegetables begin to crisp and brown.
Step 4. Add eggs and rice
Combine eggs and rice with vegetables in a skillet. Saute for 2 minutes, or until some of the rice starts to brown.
Step 5. Serve
Transfer the rice from the skillet to a plate. Sprinkle with pepper and serve.
Method 3 of 3: Making Spicy Egg Fried Rice
Step 1. Cook the rice beforehand
To make egg fried rice properly, the rice needs to be cold. This prevents the rice from sticking. Many suggest cooking the rice the day before, or using leftover rice from the previous dish. While some suggest to cook the rice a few hours in advance and put it in the refrigerator so that the rice is cold. Decide how many hours ahead you want to cook the rice. Make sure you put it in the refrigerator for a few hours before you start.
Step 2. Prepare the rice
Remove the rice from the refrigerator when you are ready to cook it. In a bowl, add 1 tbsp oil to the rice. Stir the oil into the rice with your hands or a spoon, until it coats the rice evenly. Transfer the rice to a colander and drain while you proceed to the next step.
Step 3. Put the ingredients in the pan
Combine eggs and salt in a small bowl and beat gently until combined. Heat 1 tbsp oil in a frying pan. Add the beaten eggs and cumin seeds to the pan. Stir until the eggs are scrambled.
- When the eggs are mostly solid, but still soft, remove them from the pan. The desired texture is a little more runny than scrambled eggs. Set aside.
- Add or reduce cumin seeds for flavor.
Step 4. Put the remaining ingredients in the pan
Heat the remaining oil in the pan. If desired, you can remove some of the drained oil from the rice. Add the garlic and onion to the pan. Sauté over high heat for 5 minutes or until the onions are translucent, but not too soft. Add rice, eggs, soy sauce, chili sauce, vinegar, and celery. Stir all ingredients, continue to sauté over high heat for 1-2 minutes.

Step 5. Serve hot
Spoon onto a plate. This recipe is served for 2-3 servings.
Tips
- All of the stirring methods described in the recipe can be substituted. Choose the one you prefer and use it.
- Various types of oil can be used to fry food ingredients. Since this recipe uses high heat, you will need to use a non-smoky oil easily. Peanut oil is a good choice and rich in flavours, as canola and grapeseed oil, which have a more neutral taste.
- Never use extra virgin olive oil for sauteing. This oil has a low smoke point. You can use olive oil, however, use extra light olive oil. You need to be careful when using olive oil – some types with strong flavors can clash with the flavors of other ingredients.
- Add meat to your fried rice while sauteing for extra flavor.
- A normal non-stick skillet or skillet can be used instead of a frying pan.
- Brown rice is generally more nutritious than white rice. This rice contains vitamins, fiber and beneficial fatty acids that white rice does not have.
