If you want to enjoy a healthy and tasty soup, carrot soup is a great option. Whether it's creamy/heavy carrot soup or vegetarian and dairy-free, all you have to do is whip up a saucepan and you'll be ready to make it in just an hour. We also give you some tips and ways to make this recipe richer by using whatever is available in your kitchen. Let's begin.
Ingredients
Creamy/Thick Carrot Soup
- 2 tablespoons butter
- 1 1/2 pounds chopped carrots
- 1 clove of chopped onion
- 2, 5 cm ginger root
- 4 cups vegetable gravy
- 1 cup whipping cream
Carrot Soup Without Milk
- 2 tablespoons vegetable oil
- 1 clove of chopped onion
- 8 medium sized carrots, chopped
- 3 tablespoons of washed rice
- 4 cups boiling water or vegetable or chicken gravy
- Salt and pepper for taste
- Mint leaves or other garnish
Additional ingredients you can include:
- 1 sweet potato or yam
- 2 stalks of celery
- 1 tablespoon curry powder
- 1 cauliflower
- 1 borocoli
- 1 small cabbage
- Sour cream for garnish
Step
Method 1 of 2: Creamy/Thick Carrot Soup
Step 1. Place the butter, onions and carrots in a saucepan
Cook for a few minutes until the onions are soft.
- You can also include pumpkin, apples, sweet potatoes, yams, and/or tomatoes if you are short on carrots.
- If you don't like onions, you can replace them with spring onions.
Step 2. Add and stir in the vegetable gravy, ginger, and any other ingredients you want
Each vegetable takes a different amount of time to cook. Since the vegetables will eventually be mashed, this is not really a problem. But you may still need to start adding vegetables like carrots and potatoes first as they take longer to cook than leafy vegetables like kale
Step 3. Heat until the carrots are soft
If you can pierce the carrots easily with a fork, you're ready to move on to the next step.
Step 4. Pour the gravy into a separate container
That way you separate the solid material. Don't worry, you'll still be using the gravy later.
Step 5. Put all the solid ingredients in a blender along with a little gravy
Blend until the ingredients are smooth. Put the gravy in a blender if you feel the ingredients are too thick. Separate the remaining gravy from the blender if you wish.
Don't fill the blender more than halfway. Enter little by little. Don't forget to cover the blender with a lid and a cloth for safety
Step 6. Put the mashed soup back, the separated gravy and cream back into the pot
Stir well. Also add salt, pepper, and other seasonings.!
Step 7. Serve in a bowl
Garnish with sour cream or soup leaves to taste. Enjoy while it's still hot.
Method 2 of 2: Carrot Soup Without Milk
Step 1. Put the onions and vegetable oil in a saucepan
Heat the onion in oil until the onion is soft and golden brown.
Step 2. Put the carrots in the pot
Stir well until all the ingredients are evenly coated with oil. Add the oil if you feel it's lacking.
Before adding the carrots, make sure you peel the outside of the dirty carrots a little
Step 3. Cover the pot and cook the ingredients on medium heat for 10 minutes, adding a little water if necessary
Keep an eye on the condition of the ingredients, especially the onions. If you cook it too long, reduce the heat a little.
Sometimes carrots can become slightly bitter when cooked
Step 4. Put the rice and water or gravy in the pot
This rice is just extra. You can also replace it with potatoes or not include it at all. But whatever ingredients you put in, just put them in, cover the pot, and heat for 20 minutes.
- Make sure you add the gravy or water before or immediately after adding the rice. Otherwise the rice will be scorched.
- You can add coconut milk for a different taste.
Step 5. Stir the ingredients in a blender or food processor
If you have a portable blender, you can do this much easier because you just have to put the blender in the pot. If you don't have one, you can just use a regular blender.
Step 6. Serve in a bowl and decorate
Add seasonings such as salt and pepper and garnish with parsley and soup leaves. Serve while hot.
