Step 1. Gather all the ingredients
To make delicious square coconut candy, you will need:
- 112 g grated coconut
- 450 g sugar
- 125 ml light corn syrup
- 125 ml water
- 2 tbsp butter
- tsp salt
- 1/8 tsp baking soda
Step 2. Prepare a 22.5 x 32.5 cm cake tray
Before you start, line the baking tray with aluminum foil and spray it with nonstick cooking spray. Set aside while preparing the candy dough.
Step 3. Mix sugar, water and corn syrup in a saucepan
Place the saucepan on the stove over medium heat and stir constantly until the sugar dissolves.
Step 4. Bring the mixture to a boil in the pan
Use a candy thermometer to check the temperature of the dough-it will need to be 116 degrees Celsius.
Step 5. Add butter and continue cooking until it boils
When the dough has reached 116 degrees Celsius, add the butter and stir until melted and combined. Allow the mixture to boil (without stirring) until it reaches a temperature of 127 degrees Celsius.
Step 6. Remove the pan from the stove and add the rest of the ingredients
When the mixture reaches 127 degrees Celsius, remove the pan from the heat and add the grated coconut, baking soda and salt, stirring until combined. At this stage, the dough may be slightly foamy.
Step 7. Pour the coconut mixture onto the prepared cake tray
Use a spatula to spread the dough into an even layer, then let it set for a few hours at room temperature. When it hardens, cut the coconut candy into squares and enjoy!
Method 2 of 4: Making Chocolate Wrapped Coconut Candy
Step 1. Gather all the ingredients
To make chocolate-covered coconut candy, you'll need:
- 200 g powdered sugar
- 131 g grated coconut
- 75 g chopped almonds
- 153 g sweetened condensed milk
- 350 g slightly sweet chocolate chips (semisweet chocolate)
Step 2. Combine coconut, almonds, sugar and milk
Mix all these ingredients in a large bowl until they form a sticky dough.
Use your hands to make 2.5 cm balls of dough each, then place them on a greased cake tin and let them cool in the refrigerator for about 20 minutes
Step 3. Melt the chocolate chips
When the coconut candy has cooled, place the chocolate chips in a special microwaveable bowl and melt in the microwave on high for one minute. Stir in the chocolate, then re-melt in the microwave for another 10-20 seconds until the chocolate is completely melted.

Step 1. Gather all the ingredients
To make this traditional Jamaican candy, you only need a few simple ingredients:
- 2 whole coconuts with shell
- 100 g fresh ginger, chopped
- 400 g golden brown sugar (golden brown sugar), packaging
- 750 ml of water
Step 2. Prepare fresh coconut
Take a fresh coconut with the shell still on it and use a screwdriver to make a hole in the eye of the coconut. Remove the coconut water from the center of the coconut – use it or just throw it away as you wish!
- Use a hammer to split the coconut and use a butter knife to remove the coconut flesh from the shell. Use a vegetable peeler to remove the brown outer layer of the flesh, then use a knife to cut the coconut flesh into small pieces.
- Tips & Warnings It is easier to remove the coconut flesh from the shell by roasting the drained coconut in the oven at 204 degrees Celsius for 10 minutes. Once roasted, allow the coconut to cool to the touch before splitting with a hammer.

Step 1. Gather all the ingredients
To make this Nigerian dessert, you will need:
- One fresh coconut with the shell
- 200 g powdered sugar
Step 2. Prepare the coconut
Use a screwdriver to poke holes in the coconut and take out the coconut water, setting the water aside for later use.
- Use a hammer to split the coconut, then use a butter knife to remove the flesh from the shell. Use a fine grater to grate the coconut flesh into long, thin strips. Make sure to grate the coconut meat in a straight direction, not at an angle.
- Instruction: You can remove the coconut flesh from the shell more easily by roasting the drained coconut at 204 degrees Celsius in the oven for 10 minutes. Let the coconut cool to the touch before splitting it with a hammer.
Step 3. Mix all ingredients in a saucepan and add water
Put coconut water, grated coconut, and powdered sugar into a saucepan, then stir until combined. Add enough water to cover the coconut mixture, then cover the pot and cook over high heat.
Step 4. Bring the dough to a boil
When the coconut mixture begins to boil, remove the lid from the pot and stir the mixture until some of the water has evaporated. Reduce the heat to low and continue to stir while the sugar begins to caramelize.
Step 5. Stir constantly until the coconut starts to brown
When the sugar caramelizes, the coconut mixture starts to come together and the grated coconut turns brown.
- Once it's browned, remove the pan from the heat and transfer the coconut mixture to a plate using a spoon. Be careful not to touch the coconut, as it is very hot!
