Carrot cake is a delicious signature cake for any occasion. Some recipes call for nuts and pineapple to give them a little texture and moisture, but you really don't really need them. Ingredients
- 180 gr self-raising flour (sifted)
- 350 gr caster sugar
- 1 teaspoon baking soda
- 1 teaspoon cinnamon powder
- 3 eggs
- 220 gr grated raw carrots
- 1/4 teaspoon salt
- 300 ml sunflower oil
- Decoration
- 180 gr cream cheese
- 180 g melted butter
- 220 gr sugar
- 1/2 teaspoon vanilla essence
- 1 orange for grated skin
Step
Step 1. Preheat the oven to 180 C
Step 2. Combine dry ingredients in a large bowl
Add flour, sugar, baking soda, salt and cinnamon.
Step 3. In another bowl, mix the wet ingredients
Mix the eggs, oil, and vanilla until it becomes a smooth mixture.
Step 4. Pour the egg mixture into a bowl with flour
Step 5. Add grated carrots, mix well
Be careful not to knead too much. Too much dough makes the gluten strands elongate, which makes the cake harder and less soft and crumbly.
Step 6. Use a pastry brush to coat the pan with softened or melted butter
Coat the bottom side of the pan with enough flour to give the pan a thin layer.
Step 7. Pour in the cake mix and make sure the cake mixture is evenly distributed throughout the pan
Step 8. Place the baking sheet in the center of the oven and bake for 35-40 minutes
Step 9. Test with a toothpick
After about 35 minutes, sink the toothpick into the cake and pull it back out. If the skewer is dry it means the cake is done. If the skewer is dirty or covered in dough, the cake should bake longer.
Step 10. While the cake is cooling, make the icing
Shake with an electric tool or by hand for the following ingredients:
- Sugar, cream cheese and melted butter.
- Add grated orange peel

Mix until the mixture is smooth.
Step 11. Place the cake where it will be served
You can use a cake plate or a regular large plate.
Step 12. Spread the frosting over the cake after the cake has cooled
Use a spatula to spread the frosting over the cake. Let the garnish harden.
Step 13. Serve and enjoy
Tips
- On top of the cake you can add some cute little sugar carrots; Available from all cake decorating shops.
- Add powdered sugar on top before decorating. Then while the cake is still hot, put it in the fridge.
- In addition to toothpicks you can use sharp tools.
