Grilled chicken is a delicious and healthy dish that can get you hooked quickly. You can grill any part of the chicken -- breast, thigh, thigh, and wing -- in the same way. In addition, you can also season the chicken with various spices, seasonings, and other flavors, according to taste. Start with step 1 below for a simple guide to grilling chicken, then read step 2 for grilled chicken seasoning ideas.
Step
Method 1 of 2: Grilling Chicken
Step 1. Gather the ingredients
To make a simple roast chicken that tastes great, you only need a few ingredients:
- Chicken -- You can cut a whole chicken so you get two wings, two thighs, two thighs, and two breasts. You can also use certain parts, such as the chest, lower thighs, or upper thighs, according to taste.
- You'll also need quality salt, pepper, and olive oil.
Step 2. Prepare the chicken
Wash the chicken thoroughly under running water, then dry with a kitchen cloth.
- Coat the bottom of the dish with olive oil, then add the chicken and flip it over to coat the chicken. Sprinkle both sides of the chicken with salt and pepper.
- Arrange the chicken with the skin facing up and the large parts (breast and thighs) in the middle. Make sure the chicken pieces are not too close to each other.
Step 3. Grill the chicken
Place the baking sheet in the oven at 204 degrees Celsius/400 degrees Fahrenheit and cook for 30 minutes, then reduce the temperature to 176 degrees Celsius/350 degrees Fahrenheit and cook for 10-30 minutes, depending on the amount of chicken.
- Generally, you need to bake for 14-15 minutes for every 500g of chicken. To roast 2kg of chicken, for example, you have to roast the chicken for 1 hour.
- Make sure the chicken is thoroughly cooked and don't get hung up on the roasting time. Check the liquid on the chicken by stabbing the chicken breast with a sharp knife -- the liquid will be clear when the chicken is cooked. If the liquid is pink, the chicken is not cooked.
- If you have an instant thermometer, use a thermometer to check the temperature in the thickest part of the chicken. The chicken breast should be 73 degrees Celsius when cooked, and the thighs should be 76 degrees Celsius.
Step 4. Remove and serve
If the chicken still doesn't brown, you can re-roast for another 5 minutes.
- Once cooked, remove the chicken, transfer to a serving plate, and cover with aluminum foil.
- Refrigerate the chicken for 5-10 minutes before serving. You can make chicken gravy with the recipe below for 5-10 minutes if you like.
Method 2 of 2: Adding Flavor
Step 1. Make a simple chicken gravy
The easiest way to make a fuss-free gravy is to use dripping fat from a grill plate.
- Place the dish on the stove over medium heat, and use a spoon or spatula to scoop any drips from the bottom of the dish.
- Add 1/2 cup chicken stock (pre-purchased or homemade) to the plate to help melt the fat drippings.
- Transfer the contents of the dish to a small saucepan and cook over medium heat until quite thick.
- Serve the sauce with grilled chicken.
Step 2. Make the spiced grilled chicken
To make a spiced roast chicken, use the same method for roasting chicken as described above, but add the following spices before grilling:
Combine 1/4 tsp garlic powder, 1/4 tsp onion powder, and 1/4 tsp paprika in a bowl, then sprinkle over both sides of the chicken before grilling
Step 3. Make roasted chicken with garlic and white wine
To make Garlic and White Wine Roast Chicken, you will need:
- 3 tablespoons Dijon mustard, 3 cloves minced garlic, 2 tablespoons butter, 2 tablespoons white wine, 2 teaspoons salt and 2 cups breadcrumbs.
- Saute mustard and garlic in butter for 4 minutes over medium heat. Add the wine and continue to cook the spices for a few minutes, then remove and spread the spices on the raw chicken before grilling.
- Coat the chicken with breadcrumbs and broil the chicken in the method in method 1.
Step 4. Make the spiced grilled chicken
The mix of spices and seasonings used will give the chicken an Italian flavor.
- Prepare the chicken according to the guide above. In a small bowl, combine 1 1/2 tsp dry parsley, 1 tsp dried basil, 1 tsp garlic and pepper mixture, and 1 tsp salt.
- Once the chicken is coated in olive oil, coat the chicken evenly with the spices, then bake as directed above.
Step 5. Make the honey and mustard roast chicken
To make this sweet and spicy roast chicken, you will need the following ingredients:
- 1/2 cup honey, 1/3 cup Dijon mustard, 3 tsp curry powder, 3 tbsp melted butter, 1/8 tsp ground pepper, and chili flakes.
- Combine all the spices in a bowl, add the chicken, and coat until smooth. Cover the bowl with foil or plastic and soak the chicken in the marinade for 1-2 hours.
- Place the seasoned chicken on a greased plate and cover the dish with foil. Roast the chicken according to the instructions above, and drizzle the chicken with the remaining seasoning 2-3 times during the roast. Remove the cover in the last 10-15 minutes of baking.
Step 6. Make grilled chicken with garlic and lemon seasoning
This grilled chicken is full of flavor and is perfect for families and guests alike.
- You will need 1 large onion, 1/2 cup white wine, 1/2 cup chicken stock, 5 minced garlic cloves, 5-7 tablespoons freshly squeezed lemon juice, 1 tsp dry tarragon/thyme, salt, pepper and paprika for seasoning.
- Coarsely chop the onions and place the onions on a plate, around the oiled chicken. Combine wine, lemon juice, garlic, chicken stock, and spices in a large glass, and pour over chicken and onions.
- Sprinkle chicken with salt, pepper, and paprika, then grill according to the instructions above. Drizzle the chicken occasionally with lemon juice while it's grilling.
Tips
- If you like spicy food, add jalapeno chili to your grilled chicken.
- Try grilling the chicken on a high heat before placing it in the oven to give the chicken more flavor.
- Stuff the chicken with apples, lemons, or oranges to preserve the richness of the chicken's flavor.
