The melons currently (version 1.6.4) don't grow on their own, meaning you can only get them through trading with villagers or in chests in abandoned mine shafts. Once you have melon seeds, you can plant them and grow melons, or create your own melon seeds!

Method 1 of 3: Abandoned Mine Shaft
Abandoned mine shafts are usually deep underground, and are often found when they come into contact with caves or ravines.
Step 1. Choose a deep cave or ravine to explore
Make sure you are prepared, because abandoned mine shafts are dangerous
Step 2. Explore until you see mine rails, wooden posts and fences, or torches you didn't place
Step 3. Walk down the mine shaft until you find a chest
The chest will be in the mine cart
Step 4. Each chest has a chance to have a melon seed in it
Method 2 of 3: Trading
The peasant population had the opportunity to sell melon slices with emeralds, which could be broken into seeds. Emeralds can be found while mining in extreme hill biomes.
Step 1. Find the village
Step 2. Find the farmer
The farmer wore a simple brown robe
Step 3. Right click to offer trade
If the farmer doesn't offer you melon slices, you'll have to find another farmer
Step 4. If the farmer has melon slices, drag your emeralds to the trade box, and the new melon slices will go to your inventory
Step 5. Use the melon pieces in the crafting menu, and drag the seeds into your inventory
Method 3 of 3: Growing Melon
Once you have at least one melon seed, you can start growing your own. Melon grows on farmland near water, but requires a clean block above the stem, and an empty block next to the stem to grow melon
Step 1. Create (or find) a wet farm
Step 2. Make sure there is a clean block on top of your block (air or glass)
Step 3. Plant your melon seeds
Step 4. Wait for the melons to appear
Step 5. Once you have the melon, you can break it into melon slices
These slices can be eaten or included in the crafting menu to break down into multiple seeds.
Tips
- Villages only appear in flat biomes (deserts, plains, savannas)
- Be careful while exploring the mine shaft. Cave spiders, invisible holes, monsters suddenly appearing in the dark and getting lost are very possible risks
- If none of the farmers offer melons, you can create a new trade by completing the offers they have
- To find melons, you can go to the forest.
