Do you often cook grilled or grilled fish? If you are bored with the same method of cooking fish, try cooking it by poaching in hot milk. Poaching is an easy way to quickly cook any type of fish. This method is able to enrich the taste of the fish as well as produce a creamy liquid that can be poured directly onto the cooked fish. You just need to prepare the fish filet of your choice, whole milk and a pinch of salt. After that, you can cook them on the stove, oven, or even microwave.

Method 1 of 3: Cooking Fish by Poaching on the Stove
Step 1. Select the fish
While you can use any type of fish, choose fish that goes well with the savory taste of the milk. White-fleshed fish are suitable for use. You can also use filets from the following fish:
- Bass
- Cod
- Haddock
- Halibut
- Salmon

Step 2. Heat the milk and salt in a frying pan
Choose a pan that is wide enough, then place it on the stove. Pour 500 ml of whole milk and a pinch of salt. Turn on low heat and heat the milk until it is slightly frothy.
- The milk should only be slightly bubbly when it's hot.
- You can also replace milk with coconut milk, fish stock, or other stock.
Step 3. Add fish and cook with milk
Place two fish fillets in a pan with hot milk. Each filet should weigh 150 grams. The milk should be enough to cover half the fish fillet. Continue to heat the milk and fish on the stove for about 5-8 minutes.
- Choose a filet or fish of a similar size. This will ensure that both filets cook evenly.
- You don't need to flip the cooked fish. This can actually make it crumble or overcook.
Step 4. Check the fish to make sure it is cooked
Take a bamboo or metal skewer and stick it into the thickest part of the filet. This thing should be easy to get in and out of the fish flesh. If it's still firm, re-cook the filet. If you use a fork to scratch the surface of a cooked filet, the meat will come off easily.
Cook the fish for a while, then check again. Fish cook very quickly. So, check as often as possible
Step 5. Remove and serve the cooked fish
Use a food strainer to lift the fish out of the milk. Serve fish filets with fresh vegetables, baked potatoes, rice, or a side dish of your choice.
You can use used cooking milk as an ingredient in cream sauce. Try thickening the milk with a roux, cheese, or pureed vegetables (such as cauliflower)
Method 2 of 3: Cooking Fish by Poaching in the Oven
Step 1. Prepare the ingredients and preheat the oven
Preheat the oven to 190 C. Pour 500 ml of whole milk and a pinch of salt into a shallow pan. Stir the salt until it dissolves in the milk. Prepare two skinless fish fillets, each weighing 150 grams, and place them in the baking dish so that the bottom half is submerged in milk.
Make sure you use a heatproof baking sheet for this purpose
Step 2. Bake the fish until the flesh easily peels off
Place the pan with the fish in the oven and bake for 10 to 15 minutes. Cover the fish fillets with wax paper or parchment paper to prevent the liquid from evaporating. Check the fish meat with a fork to make sure it is tender. If it's still firm, cook the fish for a few minutes, then check again.
- You can grill frozen fish. Just increase the cooking time by 10 minutes.
- Don't flip the fish. The meat will still cook evenly in the oven.
Step 3. Grill the fish and serve
You can serve fish straight from the oven with your choice of side dish. You can also bake them for a few minutes on high before serving. This method will give the fish a golden brown color.

Method 3 of 3: Cooking Fish by Poaching in the Microwave
Step 1. Prepare the ingredients
Pour 500 ml of whole milk and put a pinch of salt in a shallow pan. Stir the milk until the salt is dissolved. Place two fish filets, each weighing 150 grams, into the pan. The milk should be enough to cover half the sides of the fish fillet.
Depending on the size of the fish you are using, you can use an 8x8 pan. Just make sure that the item is heat-resistant and fits in the microwave
Step 2. Cover the pan, then cook the fish in the microwave
Cover the pan with fish and milk with plastic wrap. Take a knife, then make a hole in the plastic. Cook the fish in the microwave for 3 minutes on high heat.
You can also use a silicone cover or a microwave-safe cover instead of plastic wrap
Step 3. Remove the fish from the microwave and check for doneness
Let the fish sit for 1 minute, then cook again on high for another 1 minute. Gently remove the plastic wrap so the steam doesn't hurt you. Take a fork and rub it over the surface of the fish. When it's cooked, the meat will fall off easily. If not, microwave for 30 seconds, then check again.
