- 30 g coarse corn flour (corn meal)

- 2 tbsp. (30 ml) vegetable oil
- Juice from lemon
- 4 sprigs of parsley
Broiled Cod Fillet
- 2 cod fillets (450 g total)
- 1 tsp. (4.7 g) black pepper
- 1 tsp. (4.7 g) salt
- 2 tbsp. (30 ml) butter, melted
- 1 tsp. (4.7 g) paprika
- 1 tsp. (4.7 g) dried dill leaves
- Juice from lemon
- 3 slices of lemon
- 3 sprigs of fresh dill (a type of herb from the celery-celery family)
Poached Cod Fillet
- 6 cups cold water
- 1/4 cup dry white wine
- 3 thin slices of medium size red onion
- 3 medium size red potatoes
- 1 medium size carrot
- 2 tbsp. kosher salt (coarse salt)
- 2 medium size bay leaves
- 1 tbsp. black pepper
- 4 (170 g) codfish fillets
- 1/2 medium size lemon
- 6 sprigs chopped parsley
Oven Roasted Cod Fillet (Baked)
- 2 cod fillets (450 g total)
- 1/4 cup melted butter
- 2 tbsp. Lemon juice
- 1/4 cup all-purpose flour
- 1/2 tsp. salt
- 1/8 tsp. White pepper
- Enough peppers
Step
Method 1 of 4: Pan Fried Cod Fish Fillet
Step 1. Prepare the cod fillets
Rinse the fillets under running water for a few minutes and pat dry with a paper towel to absorb the water.
Step 2. Pour the milk into a shallow dish
Step 3. Soak the fillets in milk for 15 minutes
The milk will help get rid of the strong fishy smell.
Step 4. Mix the coarse cornstarch, salt and pepper in a shallow bowl
You can transfer them to a plate if you don't have a suitable shallow bowl. It will be easier to coat the fillets with cornstarch in a shallow bowl or plate.

Step 1. Prepare the cod fillets

Step 2. Heat your broiler (overheated oven) to high temperature or heat
Step 3. Spray your broiler tray/pan with cooking spray or grease it manually
This will prevent the fish from sticking to the broiler tray.
Step 4. After washing the fillets under running water for a few minutes, place the fillets on the top layer of the broiler tray
Step 5. Brush the fillets with melted butter using a pastry brush

Step 1. Prepare the cod fillets

Step 2. Preheat oven to 350ºF (176ºC)

Tips
Breadcrumbs or seasoned biscuits can be used instead of corn meal. Or just use coarse breadcrumbs. If you prefer to avoid the added calories from coating the fillets with flour, you can fry the fillets immediately after soaking them in the milk. But a layer of cornstarch or breadcrumbs will give the fillet a crispier texture
Warning
- Cod fillets don't have very many spines, but be careful when eating them so you don't choke on the tiny spines.
- Always keep the fish refrigerated until you are ready to cook it. Do not freeze fish for more than 3 months, and never refreeze fish after you have thawed it after it was frozen previously.
