You certainly know that pancakes are one type of traditional breakfast menu that is very easy to make. Once you know the basic recipe, you can try experimenting with different toppings to come up with the tastiest version!

Ingredients

These ingredients will make 8 pancakes about 25 cm in diameter (maybe less, or more, depending on size). If you want, you can adjust the ingredients below according to the number of pancakes you want to make:

  • 500 grams all-purpose self-rising flour (Read tips at bottom of article)
  • 2 or 3 eggs
  • 350 ml milk
  • 1/2 tsp. baking soda
  • 2 tbsp. butter or vegetable oil
  • 5 tbsp. sugar
  • 1/2 tsp. vanilla extract (optional)
  • A pinch of salt

Step

Method 1 of 2: Practicing Various Pancake Recipes

Step 1. Crack the eggs into a bowl and beat until the texture is smooth

Then, put all the dry ingredients in it. If you are using self-rising flour (which already contains a developer), do not add salt and baking soda. Do not knead the dough at this stage!

Step 2. Melt the butter in a heatproof bowl in the microwave

Wait until the butter is completely melted, about a minute.

Step 3. Add butter and milk to the dough

Then, stir all the ingredients until well mixed. If there are a few small lumps of dough left, leave it alone. Don't knead the dough until it's really smooth so that the pancakes don't feel sticky and expand more easily when cooked.

If using vanilla extract, you can mix it into the wet ingredients, namely melted butter and milk

Step 4. Heat a skillet over low to medium heat

If your stove has a special setting for cooking pancakes, use that. Make sure the pan is lightly greased with oil or butter beforehand so that the pancake batter doesn't stick to it while cooking.

Step 5. Splash the pan with water

If the water seems to "jump" from the pan and you hear a hissing sound, the pan is hot enough and ready to use.

Step 6. Pour about 3 tablespoons or 60 ml of batter onto a hot, greased skillet

To make the process easier, you can use a vegetable spoon or a special container that has a tapered funnel. Basically, the amount of batter poured will determine the size of the pancake when it's done. Therefore, you should start by pouring a little dough first. Then, increase the size if you feel the size of the pancake is still not big enough.

Step 7. Cook one side of the pancake for two minutes or until it turns golden brown

Supposedly, the surface of the pancake facing up should bubble, then the bubble should burst near the edge of the pancake. Once these conditions are met, and if the bursting bubbles leave a hole that doesn't close immediately, turn the pancake very carefully.

Step 8. Cook the other side until golden brown, then drain the pancakes from the pan

Want to make the color look darker? Re-cook each side of the pancake for 30 seconds until the color is to your liking.

Tips

  • Try adding a variety of ingredients to the pancake batter instead of sprinkling on the toppings after the pancakes are done. Some ideas worth trying are adding chocolate chips (milk chocolate or dark chocolate), fruit chunks (strawberries, bananas, blueberries, cherries, etc.), chopped bacon, grated cheese, nuts, or a variety of herbs like cinnamon.
  • Keep an eye on the pancake cooking process so the pancakes don't end up burning.
  • If you want pancakes that taste really sweet, try adding syrup, peanut butter, sugar, chocolate chips, or honey to the surface of the cooked pancakes. You can also make strawberry or raspberry syrup to make the pancakes taste fresher.
  • Make mini-pancakes that aren't too thick and then try turning them into a snack like a “sandwich” filled with cheese, jam, chocolate, fruit, or candy.
  • Try sprinkling ground cinnamon while the pancake batter is cooking. Once the dough is cooked, roll up the pancakes and serve as a delicious crepe or pancake roll.
  • Use a cleaned gravy bottle to pour out the pancake batter to keep it from falling apart.
  • Did you know that Christians in some countries have Fat Tuesday as one of their religious holidays? On that day, they will usually eat pancakes, especially because the sugar, fat, and flour content in it cannot be consumed at all during the fasting period which falls on the following day.
  • Since pancakes are a popular food in many cultures, of course, each culture will have a different recipe. Some recipes that are worth trying are:

    • Use a mixture of beer or sparkling water with milk to enrich the pancakes. In addition, the beer content also helps the dough to rise better if you don't use baking powder.
    • The ratio of the liquid ingredients (milk, sparkling water, beer) to the dry ingredients (flour) will greatly determine the texture of the pancake when it is cooked. Therefore, experiment to come up with the texture that best suits you, whether it's very light like a French crepe or thicker like an American pancake.
    • To prevent the possibility of the pancakes sticking to the pan, use sunflower oil. This type of oil has a higher smoke point than butter, making it more suitable for heating in a frying pan.
    • To make pancakes that have a very soft texture, try using liquid ingredients made from a mixture of vanilla-flavored yogurt or fruit-flavored yogurt with water.
  • Try making low-carb pancakes. To lower the carbohydrate content in pancake batter, you only need to use a mixture of protein powder with egg whites or whole eggs.

Warning

  • Don't press the pancake while it's cooking. Doing so will prevent the pancakes from rising and becoming tender.
  • Don't stack the pancakes while they're still hot, so that the moisture inside doesn't get trapped and make the pancakes very mushy when you eat them.
