Applesauce and other fruit purees can make the dough feel heavier and denser. If you want a lighter textured cookie dough, just use 30 grams of fruit puree and 1 tsp. baking powder to replace 1 egg

Make sure the pumpkin is mashed so that the texture doesn't clump in the dough
Step 4. Use a mixture of baking soda and vinegar to make the dough rise
