Oyster mushrooms, whether grown wildly or deliberately cultivated, are actually foods that are not only healthy, but also delicious, especially if processed in the right way. Before cooking, make sure you wash the mushrooms thoroughly and cut off the tough stems. Then, the mushrooms can be sliced or chopped and sautéed to produce a plate of meat-like texture in no time. If you want, you can also roast a large king oyster mushroom with a little oil and chicken stock to enrich the taste!
Ingredients
Making Simple Oyster Mushroom Saute
- 2 tbsp. extra virgin olive oil
- 500 grams of oyster mushrooms
- Salt and freshly ground black pepper to taste
Will yield: 2-4 servings of sauteed mushrooms
Making Seasoned Oyster Mushroom Saute
- 400 grams of oyster mushrooms, remove the tough stems and cut the mushrooms into small pieces
- 1 tbsp. vegetable oil
- 2 cloves garlic, coarsely chopped
- tsp. sugar
- tsp. salt
- 2 tbsp. light soy sauce (light soy sauce)
Will yield: 1-2 servings of seasoned mushroom stir fry
Roasting Oyster Mushroom King
- 700 grams of king oyster mushrooms
- 4 tbsp. cold unsalted butter, diced
- 120 ml chicken stock or low sodium stock
- 120 ml extra virgin olive oil
- Salt and freshly ground black pepper to taste
- 2 tbsp. chopped flat leaf parsley
Will make: 3-5 servings of grilled mushrooms

Method 1 of 3: Make Simple Oyster Mushroom Saute
Step 1. Cut the stems of the mushrooms
With the help of a very sharp knife, cut off the large mushroom stem and connect the mushroom cap around it. Do the same process for all the mushrooms to be processed.
Mushroom stems can be removed or stored for processing into vegetable stock
Step 2. Clean and slice the oyster mushrooms
Before processing, make sure the mushrooms have been cleaned of dust, dirt, insects, straw residue, or wood residue adhering to the surface. Then, dry the mushrooms using paper towels or a kitchen towel, and cut them into pieces about 12 mm thick.
- As much as possible, use as little water as possible to wash the mushrooms, especially since water is very easy to seep into the mushrooms and risk reducing their quality.
- Because oyster mushrooms grow on logs, and are commonly cultivated with straw or sawdust media, don't forget to clean them properly before processing them. Remember, it is common for small insects to hide under the mushroom hood, so the cleaning process must be carried out as carefully as possible.
Step 3. Heat the oil in a frying pan, then add the oyster mushroom pieces to it
Pour 2 tbsp. extra virgin olive oil in a nonstick skillet, then heat the oil over medium-high heat. Once the oil is hot and looks shiny, add the oyster mushroom pieces to the pan.
Step 4. Season and sauté the mushrooms for 6 minutes
Stir in the mushrooms, then sprinkle the surface with salt and pepper to taste. Continue to sauté the mushrooms until they are soft and lightly brown on the surface, about 6 minutes.
Step 5. Taste and serve your simple homemade oyster mushroom stir fry
Transfer the mushrooms to a serving plate and taste. If necessary, add salt and pepper to taste. Mushrooms are ready to serve when they are cool enough to eat!
Place the remaining mushrooms in an airtight container, then store the container in the refrigerator for 3-5 days
Method 2 of 3: Making Seasoned Oyster Mushroom Saute
Step 1. Cut the stems of the mushrooms
Use a very sharp knife to remove the large stem connecting the mushroom caps around it. Do the same process for all the mushrooms to be processed.
Remove the mushroom stems or save them for processing into vegetable stock
Step 2. Clean and slice the oyster mushrooms
Before processing, don't forget to clean the mushrooms from dust, dirt, insects, straw residue or wood residue that may be trapped under the mushroom hood. Then, dry the mushrooms using paper towels or a kitchen towel, and cut the mushrooms into small pieces.
Thoroughly clean oyster mushrooms, especially since these varieties usually grow on stems, or are cultivated with the help of straw and sawdust
Step 3. Boil the oyster mushrooms for 20 seconds and drain
Bring water to a boil in a 4-quart saucepan over high heat, then simmer the mushroom pieces in the boiling water for 20 minutes until they have softened. Then, drain the cooked mushrooms through a colander over the sink.
No filter? Please drain the mushrooms using a slotted spoon
Step 4. Fry the mushrooms in enough oil for 30 seconds
Pour 1 tbsp. vegetable oil in a nonstick skillet, then heat the oil over medium to high heat for about 1 minute. Once the oil is hot, sauté 2 cloves of garlic until a very fragrant aroma wafts out, about 30 seconds.
Step 5. Put the pieces of oyster mushroom and sugar into the pan
Saute the drained mushrooms with chopped garlic, then sprinkle with tbsp. sugar on it. Stir all ingredients again until well mixed.
Step 6. Saute the mushrooms for 1½ minutes
Continue to stir the mushrooms over medium heat until the surface browns, about 1½ minutes.
Step 7. Season and continue to sauté the mushrooms for 1 minute
Season the mushrooms with tsp. salt and 2 tsp of light soy sauce, then stir again until all the ingredients are completely absorbed into the mushrooms, about 1 minute.
Step 8. Serve your delicious seasoned oyster mushroom stir fry
Turn off the stove, then transfer the cooked mushrooms to a serving plate. Serve the mushrooms with warm white rice and stir-fry other vegetables, if desired.

Method 3 of 3: Baking Oyster Mushrooms
Step 1. Cut the stems of the king oyster mushrooms
With the help of a very sharp knife, cut each mushroom stem to a thickness of about 1 cm, then feel free to throw it away.
Step 2. Clean and slice the king oyster mushrooms
Before processing, make sure the mushrooms have been cleaned of dirt, dust, and other residues attached to the surface. After cleaning, dry the mushrooms using paper towels or a kitchen cloth, then cut the mushrooms into about 6 mm thick.
Step 3. Preheat the oven and arrange the king oyster mushrooms on a baking sheet
Turn on the oven to 218 degrees Celsius. While waiting for the oven to heat up, take a cookie sheet or other flat pan and arrange the king oyster mushrooms on top. Allow the position of the mushrooms to overlap slightly, if the number of mushrooms that are baked is quite large.
Step 4. Season the mushrooms with butter, chicken stock and olive oil
Dice 4 tbsp. cold unsalted butter, then sprinkle the butter pieces evenly over the entire surface of the mushrooms. Then, coat the surface of the mushrooms with 120 ml of chicken stock or low-sodium stock and 120 ml of olive oil. To enrich the taste of grilled mushrooms, don't forget to season them with salt and pepper to taste.
Step 5. Bake king oyster mushrooms for 50 minutes
Place the pan with the mushrooms in the preheated oven, then roast the mushrooms until all the liquid inside has evaporated. The mushrooms should be slightly brown in color and very soft when cooked. While it's baking for 50 minutes, flip the mushrooms occasionally to level out the doneness.
Step 6. Sprinkle chopped parsley over grilled mushrooms before serving
Remove the mushrooms from the oven and lightly pat the surface with a paper towel to remove any remaining excess moisture. Arrange the mushrooms on a serving plate, then sprinkle the surface with 2 tbsp. chopped flat-leaf parsley. Serve the grilled king oyster mushrooms while they are hot!
