The three-quarter-cooked hard-boiled egg was only lightly boiled so that the contents were still liquid. If you want to have three-quarters boiled eggs for breakfast regularly, maybe you can buy a porcelain egg cooker (egg coddler). However, if you only need to make an occasional three-quarter-boiled egg for a recipe, you won't need any special tools.
Ingredients
For 1 serving
- 1-2 eggs
- Water
- Butter, olive oil, or non-stick cooking spray.
- Salt (to taste)
- Black pepper (to taste)
Step
Method 1 of 3: Using Coddler
Step 1. Allow the eggs to come to room temperature
Remove the eggs from the refrigerator and set aside for about 30 minutes (or until the eggs are at room temperature).
If the eggs are still cold, the boiling time will be different and it is difficult to determine whether the eggs are cooked until they are completely cracked. Usually if the eggs are still cold (not from room temperature), the boiling time needs to be added 1-2 minutes
Step 2. Boil a pot of water
Fill the pot with water to about 2.5-5 cm high. Heat the pot on the stove over medium-high heat until the water boils.
- Use only enough water. When the egg boil is put in the pan, the water level should not exceed half the height of the coddler. Make sure the coddler is not completely immersed in the water.
- To prevent the coddler from sliding around, cover the bottom of the pan with a rag.
Step 3. Oil the coddler
Grease the inside of the coddler with cooking spray, butter, or cooking oil. Also oil the inside of the metal lid of the tool.
- Do this step at the same time as the previous step. That is, the preparation of coddler and eggs is done while waiting for the water to boil, not after the water boils.
- Rub the oil all over the inside of the coddler with clean hands, a tissue, or a brush. The inside of the coddler should be completely greased, but not so much that there is a pool of oil at the bottom.
Step 4. Crack the eggs and immediately put them in the coddler
The whites and yolks should go straight into the coddler. You can also add salt and pepper to the raw egg.
- The number of eggs depends on the size of the coddler. The small coddler can only hold one egg, while the larger model can hold two eggs.
- You can also add other ingredients and seasonings, such as grated cheese, fresh herbs, minced meat, or half a teaspoon of cream.
Step 5. Attach the coddler cap tightly
Install the coddler cover and twist it tightly.
The cover of the coddler should be tight enough so that water and steam don't get into it, but you don't need to turn it as hard as you can until it's too tight, just turn it lightly until you feel the pol
Step 6. Put the coddler in boiling water
Carefully lower the coddler into the boiling water. Let the eggs cook for about 5-8.5 minutes.
-
The exact cooking time depends on the size of the coddler and the eggs.
- For one medium egg in a small coddler, cook for 5 minutes.
- For one large egg in a small coddler, cook for 5.5 minutes.
- For two medium eggs in a large coddler, cook for 6.5 minutes.
- For two large eggs in a large coddler, cook for 8.5 minutes.
Step 7. Open coddler
Carefully remove the coddler from the boiling water and place it on a heat-resistant surface, such as a rag. Put on thick kitchen gloves to grip the sides of the coddler's metal lid and then twist it open.
To remove the coddler from the boiling water, try using a spoon/fork; Slide the tip of the spoon/fork into the ring above the coddler cap, then lift it. Can also put on kitchen gloves and then immediately lifted
Step 8. Serve the boiled eggs
Boiled eggs should be eaten immediately and can be served directly in the coddler.
Method 2 of 3: Without Using Coddler
Step 1. Make sure the eggs are at room temperature
Remove the eggs from the refrigerator about 30 minutes before starting to boil. Just leave it on the kitchen counter until the temperature is the same as room temperature.
Cold eggs need to be boiled longer and are difficult to get to three-quarters cooked. Generally, cold eggs should be boiled about 30-60 seconds longer than those already at room temperature
Step 2. Prepare boiling water
Fill the kettle with water and cook on the stove over high heat. Wait for the kettle to whistle or until the water boils.
You can also boil water in a pot if you don't have a kettle
Step 3. Prepare a container of ice water
While waiting for the water to boil, prepare a medium-sized bowl filled halfway with cold water and a handful or two of ice cubes.
Step 4. Put the eggs in a cup or bowl
Place the eggs in a separate, heat-resistant container and place the container on a heat-resistant surface, such as a rag.
One bowl can contain several eggs, but it's best not to touch the eggs. If the bowl is too full, the boiling process will be uneven
Step 5. Pour boiling water over the eggs
When the water is boiling, pour it over the eggs. Leave the eggs in hot water for up to 1 minute.
- One minute should be enough to make a hard-boiled egg that's still runny. If you want a firmer egg white, let the egg sit for about 5 minutes.
- If you were using a pot to boil water, just remove the pan from the stove and put the eggs in the hot water. Leave it for 1 minute. This method is somewhat risky to make the egg shells break.
Step 6. Cool the eggs in ice water
Use a slotted spoon or tongs to remove the eggs from the hot water and then place them in the ice water. Leave the eggs in the ice water for 2 minutes to stop the cooking process.
Be careful when moving the eggs so they don't break. The contents of the egg are still liquid, so if the shell breaks, the contents of the egg will spill and scatter everywhere
Step 7. Use hard-boiled eggs as desired
To get the contents of the egg, break the shell and pour the contents into a small dish.
Hard-boiled eggs prepared in this way are commonly used in recipes such as to make mayonnaise or Caesar's lettuce sauce. It's rare for the egg to be eaten right away in this state, but it's not impossible. Whatever the purpose, the eggs should be used immediately
Method 3 of 3: Using the Microwave
Step 1. Prepare a shallow container of ice water
Fill a shallow bowl or plate with ice water, just 2.5 cm high. Add a few ice cubes to make the water even colder.
Later you'll be placing an open container in this iced water, so it's best to keep the water shallow. If the water is too high, later it can enter and hit the boiled eggs in the container when placed
Step 2. Crack the eggs and pour them into a small bowl
Crack the eggs and immediately pour them into a small, microwave-safe bowl.
- The bowl doesn't need to be covered in this step.
- Use a bowl that is at least 8 cm high so that it is not easy to get ice water later.
Step 3. Cook the eggs in the microwave for 10-15 seconds
Cook the eggs in the microwave on the maximum heat setting. For one egg, it is enough to cook 10 seconds; for two eggs, 15 seconds.
When finished, the eggs should be cooked but still very runny
Step 4. Cool the eggs
Carefully transfer the bowl of eggs into the container of iced water. Let it cool for 30-60 seconds to stop the ripening process.
It's a good idea to cover the bowl or top it with plastic to prevent ice water from entering
Step 5. Use as needed
Hard-boiled eggs prepared this way are usually used in sauces or other recipes, rarely to be eaten right away.
