Step 4. Bring the rice to a boil

Reduce the heat to medium low, or low enough so that the contents of the pan will cook without boiling, then cover the pan. Let the rice cook in the covered pan for 15 minutes, or until the water is completely absorbed by the rice and the rice becomes soft.

  • Check the rice to determine if it is finished cooking. If there is still water, it means it still needs more time.
  • Be careful not to burn the yellow rice. Keep the heat low so as not to scorch the rice.

Step 2. Put all the ingredients in a large saucepan

Put the rice, coconut milk, spices, lemongrass and bay leaf in a saucepan. Use a large spoon to stir the mixture until well combined. Pot lid.

Step 3. Cook the rice

Place the pot on the stove over medium high heat. Bring the mixture to a boil, then reduce the heat to continue cooking over low heat. Continue cooking until the rice absorbs the water.

  • Check the rice as it cooks to make sure it doesn't burn. If it seems that the rice is starting to dry out, add a little water.
  • You can also moisten the rice by adding extra coconut milk.
