Dijon mustard is very suitable to be added to sandwiches (sandwiches), which are sub and wrap types. This ingredient is healthier than most other condiments, and makes a delicious and creamy addition to recipes you may already be making at home. While you can buy ready-made mustard at the store, commercial mustard is no substitute for a mix you make yourself at home. Classic Dijon Monster
- 90 grams of chopped onions
- 2 cloves garlic, chopped
- 240 ml water
- 160 ml white vinegar
- 350 ml white wine
- 130 grams of whole mustard seeds
- 30 grams of dry mustard
- 1 tbsp. (20 grams) garlic powder
- 1 tsp. (5 grams) salt
Dijon Mustard from Whole Seeds
- 110 grams of chocolate mustard seeds
- 110 grams of yellow mustard seeds
- 120 ml white dry wine
- 120 ml white vinegar
- tsp. (3 grams) kosher salt
- 1 tsp. (5 grams) brown sugar
Substitute for Moster Dijon
- 1 tbsp. (15 grams) dried mustard
- 1 tsp. (5 ml) water
- 1 tsp. (5 ml) white wine vinegar
- 1 tbsp. (15 grams) mayonnaise
- A pinch of sugar
Step
Method 1 of 4: Classic Dijon Monster
Step 1. Use a small saucepan to heat the garlic, vinegar, wine, water, and onions to a boil
Put 90 grams of chopped onion, 2 cloves of minced garlic, 240 ml of water, 160 ml of white vinegar and 350 ml of white wine in a small saucepan. Use high heat and wait for large bubbles to bubble up from the mixture.
- You can use any type of white wine available.
- What distinguishes dijon mustard from other mustards is this white wine.
Step 2. Reduce the heat and let the mixture simmer for about 15 minutes
Reduce the heat to medium and let all the ingredients mix well for about 10-15 minutes. You can leave the pot uncovered to allow the steam to escape while you cook it.
- The mixture does not need to be stirred. Because it contains a lot of liquid ingredients, it is less likely that the mixture will burn.
- This boiling will also remove the alcohol in the white wine. This makes the taste less strong.
Step 3. Turn off the stove heat and allow the mixture to cool to room temperature
Quickly turn off the heat and leave the pot there. Let the mixture sit for about 10 minutes, or come to room temperature before continuing.
Step 4. Strain the mixture and place in a large bowl
Hold a fine sieve over a large bowl and carefully pour the mixture into it. Discard the garlic and onion strips, and only keep the liquid in the bowl.
You may have difficulty holding the filter and pouring the liquid at the same time. It never hurts to ask a family member or friend for help
Step 5. Add mustard seeds, dried mustard, garlic powder and salt to the mixture
Add 130 grams of whole mustard seeds, 30 grams of dried mustard, 1 tbsp. (20 grams) garlic powder, and 1 tsp. (5 grams) of salt to the mixture. Use a wooden spoon to stir the mixture until all the ingredients are well combined.
Don't worry if the mixture is too coarse, as you'll be blending the mustard seeds later
Step 6. Cover the bowl and let it rest for 24-48 hours
Use plastic wrap to cover the mustard, and make sure it's airtight. Place the bowl on the kitchen counter at room temperature. The mustard will harden within 1-2 days.
The mustard bowl should not be exposed to direct sunlight as it can overheat. Hot mustard will develop bacteria, and this should not be the case with this delicious mustard
Step 7. Puree the mustard using a blender
Place the mustard mixture into the blender, then run the blender a few times. The level of thickness is up to you. So you can stop the blender once all the mustard seeds are smooth. You can also keep the blender running to make the mustard softer and smoother.
- You can also grind the mustard in a bowl using a hand blender.
- Creamy mustards are a great addition to recipes, while thick mustards can add extra texture to sandwiches or wraps.
Step 8. Heat the mustard in a saucepan, then add the water
Place the mustard in a saucepan and use high heat to heat it up. Slowly add about 120 ml of water to grind the mustard and thin it out. Use a whisk to stir the water and mustard mixture.
Add a lot of water if you want a thin mustard, and a little more if you like thick mustard
Step 9. Boil the mustard for 10 minutes
Reduce the heat to medium low and do not cover the pot. Next, boil the mustard for about 10 minutes. Stir the mustard occasionally so that the bottom doesn't burn from absorbing the water.
Step 10. Store the mustard in an airtight glass jar
Carefully place the mustard in a clean, sterile jar until full. Run a butter knife along the edge of the jar to remove any air bubbles before you seal it tightly.
- You can store mustard in one large jar or several smaller jars.
- Purchase a glass jar at a home supply store. These jars make it easy for you to store your mustard and look great.
Step 11. Place the mustard in the refrigerator for about a week
The process of mixing the flavors will continue in the jar. Store the mustard in the refrigerator for at least a week to get the best taste before you try it.
Write the date that the mustard was made on the jar so you know when it's time to eat it
Method 2 of 4: Dijon Mustard from Whole Seeds
Step 1. Take a small bowl and put mustard seeds, vinegar and wine in it
Place 110 grams of brown mustard seeds, 110 grams of yellow mustard seeds, 120 ml of dry white wine, and 120 ml of white vinegar in a bowl. You don't need to grind the mustard seeds in a blender at this point. With soaking, the mustard seeds will become softer.
Dijon mustard from whole seeds is not as smooth and soft as classic dijon mustard because the mustard seeds will not be mashed separately. This mustard is slightly more spicy and flavorful than classic dijon
Step 2. Cover the bowl with plastic wrap and let it rest for 2 days
Prepare a sheet of plastic wrap and use it to cover the bowl tightly. Make sure there are no holes in the plastic. Leave the bowl covered with plastic on the table for two days so that all the ingredients are well mixed.
Do not place the bowl in direct sunlight to prevent it from overheating
Step 3. Transfer the mustard mixture to a blender, then add the sugar and salt
Open the plastic wrap in the bowl and pour the mustard mixture into the blender. Add tsp (3 grams) kosher salt and 1 tsp. (5 grams) brown sugar.
- The use of brown sugar is optional, but it can make the mustard sweeter and more flavorful.
- You can also add 1 tsp. (5 grams) honey instead of brown sugar to give the mustard a honey aroma.
Step 4. Run the blender until the mustard mixture is thick and creamy
Run the blender 3-4 times until the mixture is smooth, but the mustard seeds are not crushed and completely smooth. Remember, this whole grain mustard should be coarse, not fine. So, don't blend the mixture for too long.
Use a food processor if you don't have a blender
Step 5. Pour the mixture into an airtight container
Use a rubber spatula to transfer the mixture into a plastic or glass container with a lid. Close the container tightly and write the date of manufacture on the outside of the container so you can know when it's time to eat it.
The best method of storing mustard is by canning it. This way, you can also add stickers, labels, and ribbons
Step 6. Put the mustard in the refrigerator for 2 days before you eat it
As with classic dijon mustard, the flavors in whole-seed mustard must be mixed for a few days after they are made. Store the mustard in the refrigerator for at least 2 days before serving it with hot dogs, sandwiches, or wraps.
For a strong flavor, let the mustard sit for a week
Method 3 of 4: Making a Dijon Substitute
Step 1. Use a bowl to mix dry mustard, water, and white wine vinegar
Prepare a small bowl, then add 1 tbsp. (15 grams) dry mustard, 1 tsp. (5 ml) water, and 1 tsp. (5 ml) white wine vinegar. Stir the mixture with a whisk or spoon until the dry mustard is dissolved.
If white wine vinegar is not available, you can use tsp. (3 ml) white wine and tsp. (3 ml) white vinegar
Step 2. Add mayonnaise and sugar
Add 1 tbsp. (15 grams) mayonnaise and a pinch of granulated sugar. The mayonnaise makes the mixture softer, while the granulated sugar adds the sweetness, which is the hallmark of dijon.
If you wish, you can use honey instead of sugar
Step 3. Use a spoon to gently mix all the ingredients
Use a whisk or spoon to stir all the ingredients for about 1 minute until the mixture looks smooth and creamy. The finished mixture should be bright yellow in color with a taste like dijon mustard and slightly similar to yellow mustard.
- Classic dijon mustard contains actual mustard seeds, and this is a key ingredient missing from this substitute mustard.
- If the mustard color is not what you expected, add tsp. (2 grams) turmeric powder for a classic brown/yellow color.
Step 4. Use this dijon-like monster in an emergency
You can use this mustard in a recipe that calls for dijon mustard, but you just don't have time to make it. Or, when you really want a sandwich with a bit of dijon mustard, you can add this mustard for a soft, sweet mustard flavor.
The only downside to dijon monsters is the length of time it takes to make them. So, this replacement mustard can be used in an emergency
Method 4 of 4: Using the Dijon Monster
Step 1. Spread dijon mustard on hot dogs and sandwiches for an easy addition
Whether classic mustard or whole grain, dijon mustard will add a spicy kick to hot dogs, bratwurst (German sausage) or sandwiches. Use 1 or 2 tablespoons of mustard to give food a delicious flavor, and give a deli sandwich a little nutty.
- Dijon mustard is a great addition to chicken, turkey, and sausage sandwiches.
- Try spreading dijon mustard on a vegan sandwich filled with lettuce, tomato, spinach, and thinly sliced eggplant.
Step 2. Make deviled eggs with dijon mustard for a spicy, tangy taste
Peel and cut 12 hard-boiled eggs, then scoop out the yolks using a spoon. Pound the egg yolks and mix with 2 tbsp. (30 grams) dijon mustard, 40 grams mayonnaise, and tsp. (1 ml) Tabasco sauce. Next, put this mixture back into the egg whites.
- You can also add pepper, salt, and paprika as desired to make the filling more flavorful.
- Adding dijon mustard to deviled eggs will give it a spicier and less sour taste than if you used yellow mustard.
Step 3. Mix the dijon mustard with mayonnaise to make a salad dressing
Mix 1 tsp. (5 grams) dijon mustard with 1.5 tbsp. (20 grams) mayonnaise in a small bowl. Add pepper and salt to taste, then pour this dressing on the vegetable salad for a spicy and tangy taste. Add croutons (toasted bread) for extra crunch.
Try adding tsp. (3 ml) white wine for added sensation
Step 4. Prepare some ham and cheese to serve as an appetizer
Combine dijon mustard, Worcestershire sauce, poppy seeds, and chopped onion in a bowl. Place the ham, Swiss cheese, and mustard mixture on the rolls, then cook in the oven for about 20 minutes to melt the cheese.
